1 1/2 cups packed light brown sugar
1/2 cup clover honey

Steps:

  • Adjust the oven racks to accommodate a large roasting pan. Fit the pan with a shallow roasting rack. Preheat the oven to 350 degrees F.
  • Unwrap the ham and rinse it under cold water. Place it on the rack in the roasting pan. Cover with foil and bake 1 hour 40 minutes. Meanwhile, combine the brown sugar and honey in a saucepan and cook over medium heat until the mixture is smooth and the sugar has dissolved.
  • Pour the brown sugar glaze over the ham and continue roasting1 hour 40 minutes more, basting at least twice with the drippings in the roaster. (To adjust the total roasting time for a smaller or larger ham, calculate 20 minutes per pound.) Check for doneness by inserting a meat thermometer into a meaty spot (not into fat or touching the bone)-it should register 160 degrees F.

Steps:

  • Spray the slow cooker insert with cooking spray and place ham inside.
  • Combine honey, brown sugar, mustard, cinnamon, and nutmeg in a saucepan over medium heat. Cook, whisking thoroughly, until sugar is melted and ingredients are combined, 2 to 5 minutes. Remove from heat.

1 cup honey
1 (6 ounce) can frozen orange juice concentrate

  • Combine sugar and water in a bowl and stir to dissolve sugar.

10-12 lb uncooked shank portion ham
3 Tbsp Dijon mustard
1 c brown sugar
1/2 c honey
1 tsp cinnamon

  • 1. Remove the skin and most of the excess fat. Leave a layer of fat, though, to render while the ham bakes.
  • 2. Score ham in a diamond pattern. This looks nice but also allows the fat to render while cooking.
  • 3. Place scored ham in a roasting pan.

1 whole smoked ham (14 to 18 pounds), bone in and rind on
1/2 cup honey
1/3 cup freshly squeezed orange juice
3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 large onion, cut into 6 wedges
1 large orange, cut into 6 wedges
4 sprigs rosemary
1/2 cup cider vinegar
3 1/2 cups homemade or low-sodium canned chicken stock
3 tablespoons all-purpose flour
Coarse salt and freshly ground pepper

Steps:

  • Rinse ham with cool water; dry with paper towels. Let stand, uncovered, at room temperature 1 hour. Meanwhile, whisk together honey, orange juice, balsamic vinegar, and mustard; set aside.
  • Preheat oven to 300 degrees, with rack in lower third. Fit a roasting pan with a rack, and place ham, with the thicker rind on top, on rack. Scatter onion and orange wedges and rosemary around ham on rack. Transfer to oven, and cook 1 hour.
  • Remove pan from oven, and let ham cool slightly. Increase oven temperature to 350 degrees. Trim fat all over the ham to a layer of about 1/4 inch (it does not need to be perfectly even; the bottom will have less fat and more skin). Turn ham, bottom side down. Score fat on top of ham in a diamond pattern, each 1 to 2 inches, cutting about 1/4 to 1/2 inch through the fat and into meat. Baste with honey mixture. Add enough water to roasting pan to fill the bottom by about 1/4 inch.
  • Return ham to oven, and cook 1 hour more, basting often with remaining marinade (do not baste with pan juices). If necessary, add water to pan to keep juices from burning. Remove from oven; transfer ham to a serving platter; discard orange, onion, and rosemary. Let stand 30 minutes before carving ham.
  • Meanwhile, make gravy: Strain liquid from roasting pan into a liquid measuring cup or bowl, and skim off fat from surface with a large spoon. Place roasting pan over medium-high heat. Add cider vinegar, and simmer until most of the liquid has evaporated. Return defatted juices to pan along with 2 cups stock. Bring to a boil, and let simmer.
  • In a small bowl, whisk together remaining 1 1/2 cups stock and the flour; whisk into sauce. Continue simmering until liquid is reduced by half and slightly thickened. Season with salt and pepper. Serve hot with ham.

The honey mustard and ham can be made a week and a day ahead, respectively, and stored in the refrigerator. Any leftover ham can be very thinly sliced, sealed in freezer bags, and stored in the freezer up to three months.

Steps:

  • Place ham in a large pot or cooler and add enough cool water to cover. Leave in refrigerator or another equally cool place 3 days, changing water every 12 hours.
  • Preheat oven to 500 degrees with rack in lower third. Drain ham and scrub clean; wrap in parchment-lined foil and transfer to a wire rack set in a roasting pan. Add 1/2 inch hot water to pan and bake ham 30 minutes. Turn off oven; keep ham in closed oven 3 hours. Turn oven back on at 500 degrees and bake 20 minutes. Turn off oven; let ham sit in closed oven at least 6 hours and up to 10 hours; do not open oven, even once. Then remove ham from oven and discard any water remaining in pan.
  • Preheat oven to 350 degrees. Trim rind and all but 1/4 inch fat from ham with a sharp knife. Score fat in a 1/4-inch-wide diamond pattern. Return ham to rack in roasting pan, fat side up, and sprinkle top of ham evenly with 1/2 cup brown sugar. Bake, uncovered, 30 minutes. Stir together remaining 3/4 cup brown sugar and Cognac in a small bowl. Brush ham with some glaze and bake, glazing every 15 minutes, until golden brown and a thermometer inserted into thickest part of flesh reaches 140 degrees, about 1 hour. Let ham rest at least 15 minutes. Transfer to a carving board or platter and garnish with rosemary.
  • Stir together mustard and honey in a small bowl. Serve ham, very thinly sliced, with biscuits, honey mustard, and jam.

1 bone-in hickory smoked spiral sliced ham, cooked (8 to 10 pounds)
3/4 cup honey
1/2 cup light brown sugar
1/4 cup lemon juice
1 teaspoon dry mustard
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon fresh ground black pepper
1/4 teaspoon grated nutmeg

Steps:

  • Preheat the oven to 350 degrees F. Line a shallow baking sheet with parchment paper or aluminum foil and set a wire baking rack on top.
  • Using kitchen twine, tie the ham at 2 to 3-inch intervals both horizontally and vertically. This will hold the slices together as well as help the ham remain moist while baking. Position the ham (bottom side up) on the rack.
  • Combine the remaining ingredients in a small bowl and whisk together. Pour 1/4 cup glaze evenly over the ham, then turn the ham so that the uncoated side is up. Pour 1/2 cup glaze evenly over the top.
  • Bake the ham for 30 minutes. Remove ham from the oven and brush with remaining glaze. Bake 30 minutes longer. Baste the ham a final time with the juices that have accumulated on the bottom of the pan and cook 10 minutes longer, or until the ham is heated through and the edges are nicely browned.
  • Remove the ham from the oven and let it rest for 5 minutes. Remove and discard the kitchen twine and transfer the ham to a serving platter. Carefully pour any accumulated glaze/cooking juices from the baking sheet into a small gravy boat or container. Brush the ham a final time with the glaze. Serve ham hot or at room temperature. Leftover ham is delicious in sandwiches.
  • Note: If ham begins to brown excessively before it is heated through, tent loosely with aluminum foil and continue cooking.

1/2 c honey

  • 1. Place ham in a large shallow roasting pan.
  • 2. Using a sharp knife cut into diamond-type shapes on top of the skin about 1/2 inch into the meat. If using a spiral ham, diamond cuts are optional.
  • 3. In a saucepan, mix pineapple juice about 1/2 cup with the honey and brown sugar. Then mix in mustard. Whisk together and simmer stirring for a few minutes.
  • 4. Remove glaze pan and set aside.
