Need an easy potato side dish? Try this baked mashed potato casserole. No one will ever guess it starts with instant potatoes. We thought it would need butter, but boy we were wrong. Time 45m

Number Of Ingredients 7

3 c instant mashed potato flakes, prepared
4 oz cream cheese
1/2 c Monterey Jack cheese, shredded
1/2 c cheddar cheese, shredded or cut into little pieces
3 slice bacon, crisply fried and chopped
garlic salt, to taste
pepper, to taste

Steps:

  • 1. This would work well with leftover potatoes as well. Soften your cream cheese in the microwave.
  • 2. Then add to the mashed potatoes (works better if the mashed potatoes are hot as well). Stir in the Monterrey Jack and mix well. The potatoes will begin to look very fluffy - even instant ones.
  • 3. Then I added garlic salt and pepper to taste. Put the potatoes into a greased baking dish.
  • 4. Set the oven to 350. Cut your sliced cheese into little pieces or shred regular cheddar. Sprinkle the cheese over the top of the casserole.
  • 5. Then place the chopped bacon pieces over the top. I sprayed the top of the casserole with spray butter.
  • 6. Bake for 30 minutes or until lightly browned on top and the cheese is melted. It will be almost like a souffle - really. Enjoy!!!

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for mashed potato casserole because they are fluffy and have a high starch content, which helps to thicken the casserole.
  • Cook the potatoes correctly: Be sure to cook the potatoes until they are very soft, so that they will mash easily.
  • Use a good quality cheese: The type of cheese you use will make a big difference in the flavor of the casserole. Use a sharp cheddar cheese for a classic flavor, or try a different type of cheese, such as Gruyère or Parmesan, for a more unique flavor.
  • Add mix-ins: Feel free to add your favorite mix-ins to the casserole, such as cooked bacon, diced ham, or chopped vegetables.
  • Bake until golden brown: Bake the casserole until the top is golden brown and bubbly. This will ensure that the casserole is cooked through and has a delicious crust.

Conclusion:

Baked mashed potato casserole is a delicious and comforting dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. With a few simple tips, you can make a baked mashed potato casserole that is sure to be a hit with your family and friends.
