A nice fish dish with a pleasant presentation. Good with rice. Found this one a few years ago on a free dairy farmer calendar and enjoyed it.

Steps:
- If fillets are large, cut lengthwise in half.
- Roll up fish and secure with toothpicks.
- Place in shallow rectangular baking dish.
- Sprinkle with lemon juice.
- Cover with foil and bake in a preheated 400 F degree oven for 15 minutes or until fish flakes easily with a fork.
- Meanwhile, melt butter in a saucepan.
- Blend in flour, bouillon mix and dry mustard.
- Gradually stir in the milk.
- Cook and stir over medium heat until it boils and thickens.
- Add both cheeses and stir until melted.
- Add salt and pepper and serve over the cooked and drained fish rolls.
BAKED WHITE FISH WITH MANGO SALSA
This is an easy and delicious way of cooking fish like Swai or Tilapia. Comes from a recipe on the back of a bag of frozen Swai, with a few modifications. I use store bought salsa - my favorite is Mango Lime Salsa but any type of Mango salsa would work well.

- Preheat oven to 400 degrees.
- While oven is preheating, put butter into a baking dish large enough for the filets to fit comfortably, without overlapping. Put dish into oven until butter melts. Remove from oven and stir in lemon juice, salt and paprika. Dip both sides of fish into butter mixture and arrange in baking dish. Bake 10-15 minutes or until fish flakes easily when tested with the tip of a sharp knife. Remove to plates and put 1 tblsp of salsa on top of each filet.

- Preheat oven to moderate 180°C.
- Place fish side by side in a lightly greased baking dish.
- Season with salt and pepper. Pour the wine over the fish.
- Bake about 20 minutes- check the fish has cooked. Remove fish to a warmed plate and cover with aluminium foil to keep the fish warm.
- Place the baking dish over a high heat, or alternatively pour the juices into a saucepan. Boil the liquid rapidly until slightly reduced.
- Serve the fish with the sauce poured over the top. Garnish with the parsley and serve with lemon wedges.
- Great accompanied by a light sald or steamed green vegetables.

BAKED WHITE FISH
This is based on a recipe I got from a friend 30 years ago. It was called Greek Fish but it didn't seem particularly Greek to me. The original recipe called for Haddock or white fish - I usually use snapper or cod fillets. Hope you like it - this is the first recipe I have posted!

Steps:
- Grease an 8 1/2" X 11" pan. (Or use baking spray.)
- Cover the bottom of the baking dish with the sliced tomatoes.
- Sprinkle with sugar and parsley.
- Arrange fish on top.
- Mix melted butter, paprika, Old Bay seasoning, salt, pepper and flour.
- Spread over fish.
- Bake at 400F for 20 min or until fish flakes easily with fork.
- Squeeze lemon juice over casserole before serving and serve with additional lemon wedges.
- Note 1: Put tomatoes in a bowl and blanch with boiling water. After a minute or so the skins will slip right off.
- Note 2: For fillets, I like to overlap them slightly so that the thin parts are not over cooked. For steaks, use a pan that will be nicely filled by one layer of fish.
- Note 3: If using frozen fish, I prefer to use it unthawed and just lengthen the cooking time a few minutes. Makes a quick family supper dish when time is short and nothing is thawed.
- I like this with a green vegetable and white rice.

My son and I came up with this one when we were camping on the Wenatchee River a few summers ago. I caught a huge White Fish and wanted to share it with some folks camped next to us. We all thought it turned out good and I have since made it at home using Red Snapper and Catfish.

- Marinate the fish in enough Margarita Mix to just cover the fish for 30 minutes, turning once. Do not leave longer than 1 hour.
- Preheat oven to 400*. Melt the butter in the baking dish in the oven. Add lemon juice. Stir and add the fish. Cover with diced onions, salt and pepper and basil. Bake for about 30 minutes and turn. Season other side with salt, pepper, and basil. Cook until fish flakes easily with fork. Sprinkle fish with paprika and set under the broiler for 2 minutes. Transfer to serving plate and spoon the sauce over the fish. Garnish with fresh parsely and lemon wedges. Enjoy!
