Number Of Ingredients 12

1 1/2 tablespoons of olive oil
1/2 red onion, chopped
3 cloves of garlic, minced
1 package of baby bella mushrooms, sliced
1 package of sliced shiitake mushrooms
2 portobello mushrooms, stems removed and sliced
1 teaspoon thyme
1 teaspoon oregano
1 can of organic cannelloni beans, drained and rinsed
2 tablespoons of good balsamic vinegar
vegetable broth
sea salt & pepper to taste

Steps:

  • in a medium pot, add olive oil over medium heat. add the onions and garlic and sauté for a few minutes until tender and fragrant. add all of the chopped mushrooms, thyme, oregano, a dash of sea salt and pepper, and the 2 tablespoons of balsamic vinegar and mix through. allow to sauté for 3-4 minutes. add the beans and mix through. pour vegetable broth over the mushroom mixture until just BARELY covered. you can always add more later! cover the pot and allow to simmer for 15 minutes. pour into a standing blender and blend until smooth. add more broth if needed to thin out. add another drizzle of balsamic over the top of each bowl if desired.

1 cup dried mushroom, shitakes for example
2 cups boiling water
3 tablespoons olive oil
2 teaspoons butter
1 large onion, sliced thinly
12 ounces fresh mushrooms, thickly sliced
4 cups chicken stock
1 teaspoon dried parsley
salt
pepper
2 tablespoons balsamic vinegar

Steps:

  • In a medium sized bowl, cover the dried mushrooms with boiling water and let soak for 30 minutes.
  • Saute onions for 5 minutes in the olive oil until they're softened but not browned. Add the butter (extra olive oil if you think you need it) abd fresh mushrooms. Saute for about 8 minutes.
  • Add the dried mushrooms, the soaking water, chicken stock, and parsley.
  • Bring the soup to a gentle simmer and cook uncovered for about one hour.
  • Taste after one hour. If the soup doesn't seem flavorful enough, cook a bit longer to reduce a little more. Salt and pepper to taste.
  • Puree by using an immersion blender, food processor or regular blender (If using the latter two methods, puree in batches so the container doesn't overflow).

4 tablespoons salted butter
1 1/2 pounds mushrooms, sliced
Kosher salt and freshly ground black pepper
4 cloves garlic, minced
2 stalks celery, thinly sliced
2 sprigs fresh thyme, leaves picked
1 medium onion, diced
2 tablespoons all-purpose flour
3/4 cup sherry
4 cups vegetable stock
1/2 cup heavy cream
2 teaspoons balsamic vinegar
Roughly torn fresh parsley, for serving
Crusty bread, for serving

Steps:

  • Heat 2 tablespoons butter in a pot over medium-high heat. When the butter has melted, add a third of the mushrooms to the pot. Cook, stirring occasionally, until dark golden brown, about 5 minutes. Season with salt and pepper, then remove them from the pot and reserve for serving.
  • In the same pot, melt the remaining 2 tablespoons butter. Reduce the heat to medium and, when the butter has melted, add the rest of the mushrooms, along with the garlic, celery, thyme and onion. Cook, stirring frequently, until the vegetables are soft, 5 to 6 minutes. Sprinkle the vegetables with the flour and stir to combine.   • Using an immersion blender, puree until the mushrooms are mostly broken up into small barley-sized bits. (NOTE: You may use a blender, though allow the soup to cool until warm before pureeing.) Add the cream and heat until the pot is simmering. Add the balsamic, then taste and adjust the seasonings.
  • Serve warm in bowls with the reserved mushrooms on top. Garnish with parsley and crusty chunks of warm bread.
