Categories     dessert

Time 2h30m

Number Of Ingredients 19

7 ounces unsalted butter
1 1/2 cups granulated white sugar
3 large eggs
1/2 cup buttermilk
1 1/3 cups mashed ripe banana
1 1/3 cups sifted cake flour
1 teaspoon baking powder
3/4 teaspoon salt
3/4 teaspoon baking soda
1/2 cup finely chopped pecans
1 can (13.5 ounces) unsweetened coconut milk*
1 cup milk
2/3 cup white sugar
5 egg yolks
1/3 cup cornstarch
3 bananas, sliced
1/4 cup lemon juice
2 tablespoons white sugar
1 cup unsweetened coconut flakes, toasted golden brown

Steps:

  • Cake:
  • Preheat the oven to 350 degrees. Butter and flour two 9-inch cake pans. In the bowl of an electric mixer, beat the butter and sugar together until it is light and fluffy. Add the eggs one at a time, beating well in between each addition, and continue to beat until very light and fluffy. Add buttermilk and mashed banana and mix well. In a separate bowl, sift and dry ingredients together (flour, baking soda, salt, baking powder), then add to batter and mix at low speed on the electric mixer until moistened. Beat one minute at medium speed, then fold in pecans and pour batter evenly into the two prepared cake pans. Bake for 25 to 35 minutes, until a toothpick inserted in the center comes out clean. After removing the cakes from the oven, allow them to cool for five minutes, then invert onto a cooling rack. Assemble when thoroughly cooled.
  • Coconut Custard:
  • Line a baking sheet with parchment paper and cut another piece of parchment to the same size. Set both aside. Combine the coconut milk and milk and stir together. In a bowl, mix 2/3 cup of sugar with 1/3 cup cornstarch and stir with a fork until free from lumps. Mix the sugar and cornstarch together with the egg yolks and 1 cup of coconut milk mixture. Whisk until smooth and set aside. In a heavy saucepan, bring the remaining coconut milk mixture to a boil. Pour it into the bowl with the egg yolk-sugar mixture, whisking constantly. Return the mixture to the saucepan over medium flame and continue stirring. Cook until small bubbles start to form on the surface of the custard. Remove from the heat and spread onto the parchment-lined baking sheet. Cover the top of the custard with the other sheet of parchment to prevent a skin from forming. Cool in the refrigerator.
  • To Assemble Cake:
  • In a large bowl, gently toss banana slices with the lemon juice, and sugar. Trim the top of the first layer of cake so that the surface is level, then spread with a thin layer of custard. Place bananas completely over bottom layer, so that no cake is showing. Spread with another layer of coconut custard. Place next cake layer on top of this and spread the top generously with coconut custard. Garnish liberally with toasted coconut flakes.

EASY THAI BANANA COCONUT CUSTARD

Easy Thai Banana Coconut Custard image

This easy banana coconut custard dessert recipe is normally steamed in Thailand, but baking it in the oven is just as good and less messy.

Provided by Darlene Schmidt

Categories     Dessert

Time 1h10m

Yield 4

Number Of Ingredients 7

1 cup coconut milk
1/3 cup sugar, or to taste
2 eggs
1 ripe banana
1 teaspoon coconut flavoring, or vanilla flavoring, or both
Oil, for ramekins
1 (16-ounce) package of banana leaves , optional

Steps:

  • Preheat the oven to 350 F.
  • Prepare 4 to 6 ramekins for the dessert by greasing them with a little oil. If you have banana leaves, make a lining with them by cutting two or more wide strips and pressing them into the ramekin (like a cross or a basket).
  • Place the coconut milk, sugar, eggs, banana, and flavoring in a blender or food processor. Blend or process for 30 seconds. If you don't have a blender or processor, simply mix the ingredients together in a bowl with a fork or whisk for 1 minute, or until the sugar has dissolved.
  • Pour the mixture into the ramekins, filling each one 3/4 full.
  • Place the ramekins in a flat-bottomed glass dish (a lasagna or casserole dish works well). Fill part-way with water-up to 1/2 the height of the ramekins-and carefully place the dish in the oven.
  • Bake for 45 minutes to 1 hour, or until the custard has set and is firm.
  • Serve the ramekins either hot, cold or at room temperature. If desired, sprinkle with a little dry shredded coconut, sweetened or unsweetened. Coconut milk is used in many Thai desserts as well as savory dishes. For those who want creaminess but are eating dairy-free, it is a useful ingredient. You may also want to make a Mango Custard and enjoy another tropical fruit flavor.

BANANA COCONUT ICE CREAM

Banana Coconut Ice Cream image

Categories     Dairy     Fruit     Dessert     Freeze/Chill     Quick & Easy     Banana     Coconut     Winter     Gourmet     Vegetarian     Pescatarian     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes about 2 1/2 cups, serving 2 generously with leftovers

Number Of Ingredients 5

2 firm-ripe medium bananas
1/2 cup well-stirred canned cream of coconut such as Coco Lopez
1/3 cup heavy cream
1 teaspoon vanilla
1 teaspoon fresh lemon juice

Steps:

  • Cut bananas into 1/2-inch-thick slices and arrange in one layer in a shallow baking pan. Freeze bananas 15 minutes, or until firm. In a blender or food processor purée bananas with remaining ingredients until smooth. Freeze mixture in an ice-cream maker.

Tips:

  • To achieve a smooth custard, ensure that the egg yolks and sugar are whisked thoroughly until the mixture is thick and pale in color.
  • For a richer custard, use heavy cream instead of milk. You can also add a teaspoon of vanilla extract or a pinch of cinnamon for extra flavor.
  • When adding the hot milk to the egg mixture, do so gradually while whisking constantly to prevent curdling.
  • To prevent the custard from overcooking, remove it from the heat as soon as it thickens enough to coat the back of a spoon.
  • For a firmer custard, let it cool completely before refrigerating. Alternatively, for a softer custard, serve it warm.

Conclusion:

Whether you prefer a classic banana coconut custard or a more modern twist with a graham cracker crust, these recipes offer a delightful dessert option. With their creamy texture, sweet banana flavor, and hints of coconut, these custards are sure to satisfy your sweet cravings. Experiment with different variations to find your perfect combination of flavors and textures. Remember to use fresh ingredients and follow the tips mentioned above to ensure a smooth and delicious custard every time.
