2 ripe bananas, peeled
1 cup pancake mix
½ teaspoon cinnamon
¾ cup milk
oil, for frying
powdered sugar, to serve

Steps:

  • In a mixing bowl, use a fork to smash the bananas.
  • Add in pancake mix, cinnamon and milk. Whisk together until combined.
  • Fry in oil. About 1 tablespoon per fritter.
  • Cook for about 2-3 minutes until they are golden brown and cooked through the middle.
  • Sprinkle powdered sugar.

It costs a lot of money for a decent bottle of pasta sauce - so I thought I would have a go at making my own to freeze. It tastes yummy

2 kg very ripe almost yukky tomatoes, chopped
1 teaspoon olive oil
1 onion, chopped
6 cloves garlic, crushed
1 zucchini, sliced
1 eggplant, diced
100 g sliced mushrooms
20 g fresh basil, chopped
sea salt

Steps:

  • Fry the onions and garlic in olive oil until fragrant.
  • Add the chopped tomatoes, zucchini and eggplant.
  • There is no need to add liquid as the tomatoes form their own.
  • Bring to the boil, then cover and simmer for around 40 minutes- until everything is very soft.
  • Season to taste.
  • Strain the tomato mixture- do not reserve the liquid, and transfer to a blender.
  • Add the chopped basil to the blender and blend until the sauce is smooth.
  • Return the sauce to the pot, and add the sliced mushrooms.
  • Simmer until the mushrooms are cooked.

3 cups avocado oil, for frying
6 ripe saba bananas, peeled
½ cup brown sugar, packed
6 bamboo skewers, 8 in (20 cm)

Steps:

  • Heat the avocado oil in a large diameter wok or skillet over medium-high heat until the temperature reaches 350°F (180°C).
  • Carefully add the bananas to the hot oil, then sprinkle the brown sugar over the bananas. Fry for 2 minutes without stirring to allow the sugar to caramelize. Carefully turn bananas with tongs or a wok spatula to coat with the caramelized sugar. Continue frying, turning frequently, until the bananas are deep golden brown in color, 3-5 minutes.
  • Remove the bananas from the oil and place on parchment paper and let sit until cool enough to touch, about 5 minutes.
  • Insert 1-2 skewers into the bottom of each banana cue. Serve immediately.
