From yahoo group. Recipe description: NOTE: Serve over ice cream with whipped cream and chocolate syrup! This also makes a great spread on toast or topping for pancakes or waffles, pound cake or cheesecake, and everything else you can think up. If you don't like any of the specific classic banana split fruits, of course you can leave it out and increase the other fruits, or replace it with something else. If you don't like walnuts, use pecans, or no nuts at all. I added banana rum because I had it. You could use another rum, or leave that out altogether.

2 cups mashed bananas
1/2 cup lemon juice
2 cups crushed strawberries
1 1/2 cups crushed pineapple
1 cup halved maraschino cherry
1 (1 3/4 ounce) package powdered pectin
5 cups sugar
1/2 cup chopped walnuts
1/2 cup banana rum (optional)

Steps:

  • Mix lemon juice into bananas immediately after mashing to retain the fresh color then combine all the fruit and the pectin in a big pot.
  • Bring to a boil, stirring frequently. Add sugar (and a dab of butter to reduce foaming). Bring to a rolling boil; boil hard one minute. Remove from heat and add nuts and rum (if using).
  • Ladle into jars leaving a 1/4 inch headspace.
  • Process in a boiling water bath for 10 minutes. Adjust time according to your altitude.

TRADITIONAL BANANA SPLIT

There is some debate in our ice cream parlor what the "traditional" split consists of. I did some research before we opened and it seems that this is the most consistently "traditional" split served, even though some have marshmallow, peanuts, crushed cherries and more. I prefer hot fudge over the chocolate syrup, personally :P

1/2 cup scoop vanilla ice cream
1/2 cup scoop chocolate ice cream
1/2 cup scoop strawberry ice cream
1 large ripe banana
2 tablespoons chocolate syrup (or Hot Fudge)
2 tablespoons strawberry ice cream topping (or fresh strawberries)
2 tablespoons crushed pineapple
2 tablespoons wet walnut ice cream topping
whipped cream
cherries

Steps:

  • Line up ice cream scoops next to each other in an oval deep dish or a banana boat.
  • Cut the ends of the banana off (about 1/4 inch) while still in the peel.
  • Slice in half longways.
  • Pop each half of the banana out of the peel onto each side of the ice cream row, pressing down and in a little so it'll stay put.
  • Top the vanilla ice cream with the pineapple, the chocolate with the chocolate syrup and the strawberry with the strawberry sauce.
  • Spoon the wet walnuts over all three scoops of ice cream.
  • Top each scoop with some whipped cream and a cherry for each.
  • Enjoy!

1 medium dole banana, sliced
2/3 cup(s) nonfat vanilla frozen yogurt
2 tablespoon(s) hersheys lite chocolate syrup
4 tablespoon(s) whipped topping
2 - cherries for garnish

Steps:

  • place half of the banana slices in the bottom of each jar.
  • top each with 1/3 cup of frozen yogurt, then 1 tablespoon each of chocolate syrup.
  • finish with the whipped cream and top with a cherry and grab a spoon and dig in.

I received this recipe from my retired school-teaching Aunt who selected this as her all-time favorite cookie recipe from the many years of teaching and having students bring in their favorite cookies.

½ cup butter
1 cup packed brown sugar
2 eggs
1 cup mashed bananas
2 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
½ cup chopped walnuts

Steps:

  • In a medium bowl, cream together the butter and brown sugar. Beat in the eggs and mashed banana. Sift together the flour, baking powder, baking soda, salt, cinnamon, and cloves; blend into the banana mixture. Stir in the nuts. Cover, and chill for at least 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets. Drop dough by rounded teaspoons onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, or until no imprint remains when touched. Cool on wire racks.
