3 bananas
1/2 cup walnuts, chopped
2 cups water
2 packages active dry yeast
2 tablespoons salt
4 tablespoons sugar
5 cups flour
1 tablespoon vegetable oil
cornmeal

Steps:

  • combine yeast, water, and sugar in bowl of electric mixer fitted with a dough hook.
  • Mix to combine and let sit for 10 minutes.
  • When the yeast is foamy, add all of the mashed bananas and nuts.
  • Mix until combined.
  • Add all of the salt and the flour 1/2 cup at a time until 4 cups have been added.
  • Add another half cup and mix with a spoon.
  • Add the final half cup and mix.
  • Dough will be sticky, but firmer than regualar bread dough.
  • Dump all onto a floured surface and kneed for 10 minutes until the dough is no longer sticky.
  • Form into a ball and let rise in a greased bowl for 1 hour.
  • Punch down dough and divide into 12 portions.
  • Roll the dough into a 6 inch log and pinch together the ends.
  • Put onto a lightly greased surface and continue until all 12 are finished.
  • Cover with a clean towel and let rise for another 30 minutes.
  • In the meantime, bring to a boil 12 cups of water with 1 tablespoon of sugar.
  • Drop 4 bagels in at a time and boil for 1 minute.
  • Remove to a baking sheet lined with cornmeal.
  • Bake for 5 minutes at 450, then lower to 350 and bake for 25-30 minutes, depending on how you like your bagels.

3 tablespoons Worcestershire sauce
2 tablespoons vegetable oil
2 tablespoons light brown sugar
2 large eggs, beaten
2 tablespoons salted butter, softened, for buttering the pan
1 1/2 cups plus 2 tablespoons all-purpose flour
1 cup roughly chopped walnuts
1 1/2 teaspoons baking powder
1/4 teaspoon ground cinnamon

Steps:

  • Stir together the bananas, granulated sugar, Worcestershire sauce, oil, brown sugar and eggs in a medium bowl. Let rest at room temperature 30 minutes.
  • Meanwhile, preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-by-5-inch loaf pan and dust with 2 tablespoons flour.
  • Whisk together the walnuts, baking powder, cinnamon and remaining 1 1/2 cups flour in a large bowl and toss to coat the walnuts. Add the wet ingredients to the dry ingredients and stir to combine.

1 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs, at room temperature
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, at room temperature, plus more for preparing the pan
1 cup sugar
3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)
1/2 cup toasted walnut pieces

Steps:

  • Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
  • In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter while mixing until incorporated. Add the bananas (the mixture will appear to be curdled, so don't worry), and remove the bowl from the mixer.

1/2 banana, sliced
1/4 teaspoon cinnamon

  • smear each side with cream cheese (just a thin layer, this is supposed to be diet food).
