Yield 6 servings

Number Of Ingredients 15

2 pounds (12 to 15 per pound) shrimp in the shell
3 tablespoons good olive oil
2 tablespoons dry white wine
Kosher salt and freshly ground black pepper
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
4 teaspoons minced garlic (4 cloves)
1/4 cup minced shallots
3 tablespoons minced fresh parsley leaves
1 teaspoon minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 extra-large egg yolk
2/3 cup panko (Japanese dried bread flakes)
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel, devein, and butterfly the shrimp, leaving the tails on. Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper. Allow to sit at room temperature while you make the butter and garlic mixture.
  • In a small bowl, mash the softened butter with the garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, 1/2 teaspoon salt, and 1/4 teaspoon of pepper until combined.
  • Starting from the outer edge of a 14-inch oval gratin dish, arrange the shrimp in a single layer cut side down with the tails curling up and towards the center of the dish. Pour the remaining marinade over the shrimp. Spread the butter mixture evenly over the shrimp. Bake for 10 to 12 minutes until hot and bubbly. If you like the top browned, place under a broiler for 1 minute. Serve with lemon wedges.

LINGUINE WITH SHRIMP SCAMPI - BAREFOOT CONTESSA INA GARTEN

Linguine With Shrimp Scampi - Barefoot Contessa Ina Garten image

This is a light pasta dish with plenty of shrimp, garlic, and lemon. I have reduced the amount of lemon and salt from the original recipe to suit my DBF's tastes. The leftovers are just as good heated up in the microwave the next day.

vegetable oil
1 tablespoon kosher salt, plus
1 1/2 teaspoons kosher salt
3/4 lb linguine
3 tablespoons unsalted butter
2 1/2 tablespoons olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 lb large shrimp, peeled and deveined (about 16 shrimp)
1/4 teaspoon fresh ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup fresh lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes

Steps:

  • Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.
  • Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily!
  • Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often.
  • Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.
  • When the pasta is done, drain the cooked linguine and then put it back in the pot.
  • Immediately add the shrimp and sauce, toss well, and serve.

Tips:

  • Use fresh shrimp for the best flavor. Frozen shrimp can be used in a pinch, but fresh shrimp will yield a more succulent and flavorful dish.
  • Don't overcook the shrimp. Shrimp cooks very quickly, so it's important to keep an eye on it and remove it from the heat as soon as it's cooked through. Overcooked shrimp will be tough and rubbery.
  • Use a good quality white wine. The wine you use will flavor the sauce, so it's important to choose a wine that you enjoy drinking. A dry white wine, such as Sauvignon Blanc or Pinot Grigio, is a good option.
  • Don't skimp on the butter. Butter is what makes this sauce so rich and flavorful. Use unsalted butter so that you can control the amount of salt in the dish.
  • Serve the shrimp scampi over pasta or rice. This dish is traditionally served over pasta, but it can also be served over rice or even quinoa.

Conclusion:

Barefoot Contessa's Baked Shrimp Scampi is a delicious and easy-to-make dish that is perfect for a weeknight meal. The shrimp is cooked in a flavorful sauce made with white wine, butter, garlic, and herbs. The dish is then baked until the shrimp is cooked through and the sauce is bubbly and golden brown. Shrimp scampi can be served over pasta, rice, or quinoa.
