2 stalks celery, cut into 1/4-inch half-moons
1 onion, chopped
Kosher salt and freshly ground black pepper

OPIE'S CHEESY TATER TOT CASSEROLE

Opie's Cheesy Tater Tot Casserole image

I created this recipe over time in homage to the original from Opie's BBQ in Spicewood, TX. Some things to note: Ore-Ida tater tots have lots of salt and seasoning; typically off-brand do not. I would probably add over a tsp for off-brand tots.

BBQ CHICKEN TATER TOT CASSEROLE RECIPE

BBQ Chicken Tater Tot Casserole Recipe image

Provided by á-6416

Number Of Ingredients 4

3 cups of cooked, shredded chicken
Bar-b-que sauce {Make sure your favorite doesn't contain High Fructose Corn Syrup}
1 bag of Tater Tots
1 cup {4 oz} of shredded cheddar cheese {preferably organic or raw - I buy in a block and shred myself}

Steps:

  • This "recipe" couldn't be easier. Preheat your oven to 350 degrees. Toss your chicken in a 9×11 baking dish. Pour in some bar-b-que sauce and stir it around. Add more if you need to until the chicken is good and coated. Spread the chicken out so that it covers the bottom of the dish. Top the bar-b-que chicken with tater tots. Top the tater tots with cheddar cheese. Pop it in the oven and bake for about 30 minutes, or until the tater tots are browned and cooked through.

Tips:

  • Use a variety of vegetables. This will add flavor and texture to the casserole. Some good options include broccoli, cauliflower, carrots, celery, and zucchini.
  • Don't overcook the chicken. Otherwise, it will become dry and tough. Cook it until it is no longer pink in the center.
  • Use a good quality cheese. This will make a big difference in the flavor of the casserole. Some good options include cheddar, mozzarella, and Parmesan.
  • Don't be afraid to experiment. There are many different ways to make this casserole, so feel free to add your own personal touches. For example, you could add a different type of cheese, or use a different type of meat.

Conclusion:

BBQ Chicken Tater Tot Casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is loaded with flavor and is sure to be a hit with the whole family. So next time you are looking for a quick and easy meal, give this casserole a try.
