1 cup plus 2 tablespoons biscuit/baking mix, divided
1/4 cup milk
1 pound ground beef
1 medium onion, chopped
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 can (14-1/2 ounces) diced tomatoes with garlic and onion, undrained
2 large eggs, lightly beaten
2 cups shredded cheddar cheese
Chili sauce, optional

Steps:

  • In a small bowl, combine 1 cup biscuit mix and milk; stir until a soft ball forms. Turn onto a floured surface; knead 5 times. Roll out dough to fit a 9-in. pie plate. 1 1/2 teaspoons dried oregano
1 1/2 teaspoons ground cumin
1 teaspoon salt
2 tablespoons chili powder
1 (14 ounce) canned stewed tomatoes
2 cups fresh corn kernels or 2 cups frozen corn kernels
1/2 cup chopped fresh cilantro
1 1/2 cups grated monterey jack pepper cheese, divided
1 1/2 cups grated sharp cheddar cheese, divided
3 cups reduced-sodium chicken broth
1 teaspoon salt
2 cups yellow cornmeal
2 cups cold water
1 cup low-fat plain yogurt
1/3 cup low-fat plain yogurt
3 tablespoons heavy cream (can use light)
1/2 cup canned diced tomato, drained
sour cream (optional)
1 (6 ounce) can pitted black olives (optional)
