Time 3h50m

Yield 8 serving(s)

Number Of Ingredients 29

3 lbs skirt steaks or 3 lbs flank steaks, trimmed
2 quarts water
2 carrots, chopped coarse
1 large onion, chopped coarse
2 celery ribs, chopped coarse
1 bay leaf
3 garlic cloves, crushed lightly
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon salt
1/4 teaspoon whole black peppercorn
2 green bell peppers, cut into 1/4-inch strips
1 red onion, cut into 1/4-inch strips
4 tablespoons olive oil
14 -16 ounces canned whole tomatoes, with juice, chopped
3 tablespoons tomato paste
3 garlic cloves, minced
1 teaspoon ground cumin
1/4 teaspoon dried oregano
2 red bell peppers, cut into 1/4 inch strips
2 yellow bell peppers, cut into 1/4 inch strips
1 cup frozen peas, thawed
1/2 cup Spanish olives with pimento, drained and halved
2 tablespoons olive oil
2 teaspoons cumin seeds
1/4 teaspoon saffron, crumbled
2 cups unconverted long-grain rice
4 cups water
3/4 teaspoon salt

Steps:

  • To braise beef: In a 5-quart kettle combine all braising ingredients and simmer, uncovered, 1 1/2 hours, or until beef is tender. Remove kettle from heat and cool meat in liquid 30 minutes. Transfer meat to a platter and cover. Strain braising liquid through a colander, pressing on solids, into a bowl. Return braising liquid to kettle and boil until reduced to 3 cups, about 30 minutes. Stew may be made up to this point 1 day ahead. Cool braising liquid completely and chill it and the beef separately, covered.
  • In kettle cook green bell peppers and onion in 2 tablespoons oil over moderate heat, stirring, until softened.
  • While vegetables are cooking, pull meat into shreds about 3 by 1/2 inches. To onion mixture add shredded meat, 2 cups braising liquid, tomatoes with juice, tomato paste, garlic, cumin, oregano, and salt and pepper to taste and simmer, uncovered, 20 minutes.
  • While stew is simmering, in a large skillet cook red and yellow bell peppers in remaining 2 tablespoons oil over moderate heat, stirring occasionally, until softened. Stir peppers into stew with enough additional braising liquid to thin to desired consistency and simmer, uncovered, 5 minutes. Stir in peas and olives and simmer, uncovered, 5 minutes.
  • Serve ropa vieja with yellow rice.
  • To make the yellow rice: In a heavy 3-quart saucepan heat oil over moderately high heat until hot but not smoking and sauté cuminseed 10 seconds, or until it turns a few shades darker and is fragrant. Stir in saffron and rice and sauté, stirring, 1 to 2 minutes, or until rice is coated well. Stir in water and salt and boil rice, uncovered and without stirring, until surface of rice is covered with steam holes and grains on top appear dry, 8 to 10 minutes more. Remove pan from heat and let rice stand, covered, 5 minutes. Fluff rice with a fork.

BEEF STIR-FRY WITH ASPARAGUS, RED BELL PEPPERS AND CARAMELIZED O

Beef Stir-Fry With Asparagus, Red Bell Peppers and Caramelized O image

A great summer dish with fresh, local and organic ingredients! Do not be fooled by the long list of ingredients. This recipe is very easy and incredibly tasty, inspired by the sharp, tangy flavors of Asian cooking. A wok would be ideal, but a good skillet or saute pan will do the trick. Serve this dish with plain or white rice.

Categories     Vegetable

Time 45m

Yield 4 serving(s)

Number Of Ingredients 13

1 tablespoon dry sherry
1 tablespoon tamari soy sauce
2 teaspoons cornstarch
1 lb flank steak
2 -3 tablespoons peanut oil
1 sweet onion
1/2 lb asparagus
1 red bell pepper
2 tablespoons balsamic vinegar
1 teaspoon sugar
1/2 cup chicken stock
1 tablespoon cornstarch
3 tablespoons water

Steps:

  • Trim the excess fat and cut the flank steak in small, bite-size pieces. Combine the ingredients for the marinade and let the beef marinate for at least 20 minutes.
  • Meanwhile, cut the onions in thin slices. The bell peppers should be seeded and cut in 1-inch slices. Cut the tougher ends of the asparagus and slice them on the diagonal into 2-inch long pieces.
  • Bring a medium pan of water to a boil, reduce to a simmer and throw the asparagus in for about 2 or 3 minutes. Drain them, run them under cold water and dry them.
  • In a wok or sauté pan over a high flame, heat 1 tablespoon of the oil. Add the marinated beef strips, making sure it makes a nice sizzling sound. Once the meat is nicely browned on the outside, but still tender in the middle, about 2-3 minutes depending on the size, take it out and set it aside on a plate. You may need to sear the beef in two batches if your wok is not big enough.
  • Add 1 more tablespoon of the oil, and briefly stir-fry the asparagus for 3-4 minutes at medium-high eat. Set the asparagus aside and keep warm.
  • Add another tablespoon of oil, if necessary, and add the onions. Toss and turn until they have a nice golden brown color, 7 to 10 minutes. Add the peppers and stir until softened, about 4-5 minutes. Add sugar and vinegar, and cook for a few more minutes until the onions begin to caramelize.
  • Add the stock and bring to a simmer cooking for another 2 minutes to reduce the liquid. Mix the cornstarch with the 3 tablespoons of water and add slowly add it to the mixture until the sauce is a thick as you desire.
  • Return the beef and the asparagus to the pan and stir for another minute or so to amalgamate the flavors. Serve immediately with some white or brown rice.

Provided by Chef John

Categories     Main Dish Recipes     Stuffed Main Dish Recipes     Stuffed Bell Pepper Recipes

Time 1h40m

Yield 6

Number Of Ingredients 14

6 bell peppers
2 ½ cups chunky tomato sauce
½ onion, very thinly sliced
1 cup beef broth
¼ teaspoon red pepper flakes
1 ½ pounds lean ground beef
1 ½ cups cooked rice
½ cup freshly shredded Parmigiano-Reggiano cheese
¼ cup chopped fresh flat-leaf parsley
½ cup chunky tomato sauce, divided
4 cloves garlic, minced
2 teaspoons salt
½ teaspoon freshly ground black pepper
1 tablespoon chopped fresh flat-leaf parsley, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Slice the top 1/2 inch from the tops of peppers and cut out the stems from the tops. Cut the core from the inside of the peppers and strip away any seeds. Cut away a very thin slice of pepper from the bottoms so the peppers can stand upright. Poke about 4 tiny holes in the bottoms to let juices drain out.
  • Pour 2 1/2 cups tomato sauce into a 9x13-inch baking dish. Add onion, beef broth, and red pepper flakes; spread out mixture evenly over the bottom. Set prepared bell peppers upright in the dish.
  • Combine ground beef, cooked rice, Parmigiano-Reggiano cheese, 1/4 cup parsley, 2 tablespoons tomato sauce, garlic, salt, and black pepper in a large mixing bowl.
  • Lightly stuff peppers with meat mixture. Spread 1 tablespoon remaining tomato sauce on top of each portion of stuffing; place reserved tops onto peppers. Lay a piece of parchment paper loosely on top of peppers and cover dish tightly with foil. Lay dish on a baking sheet.
  • Bake in preheated oven for 1 hour. Peppers should be starting to soften. Remove foil and parchment paper. Continue to bake until meat filling is cooked through and the peppers are tender, 20 to 30 more minutes. Sprinkle each pepper with 1/2 teaspoon parsley and drizzle with a spoonful of pan juices.

BEEF AND QUINOA STUFFED BELL PEPPERS

Beef and Quinoa Stuffed Bell Peppers image

I made this recipe for a challenge in the Culinary Quest. Since I had quinoa to use up and wasn't sure what I was going to use it for, I decided to pretend it was rice. I used two other recipes to make this. The first being Recipe #16399 by dibs. Then prepared it like Debbwl suggested... Recipe #415970. I hope you enjoy this dish. *Note: Prep and Cook times do not include toasting of quinoa or resting times.

CHINESE BEEF AND PEPPERS

Chinese Beef and Peppers image

This dish is not going to taste like the Americanized yet popular version at Chinese takeouts. Way way better! Enjoy!

Provided by Marsha Gardner

Categories     Beef

Number Of Ingredients 11

1 lb flank steak
1 1/2 Tbsp soy sauce
1/2 Tbsp rice wine
1/2 Tbsp sugar
1 1/2 medium green bell peppers, sliced
1 medium onion, sliced
4 oz mushrooms, sliced (optional)
any spicy chili, sliced (optional)
1 1/2 Tbsp cornstarch
2 Tbsp oyster sauce
rice to serve

Steps:

  • 1. Slice flank steak against the grain in 1/4″ slices. For thicker parts of the flank steak, you may need to slice the strip in half so it's not too wide. In a medium bowl, mix beef with soy sauce, rice wine, and sugar. Set aside for 15 minutes.
  • 2. While beef is marinating, heat 1 tablespoon oil in a wok or similar on high. Add peppers, mushrooms if using and onions with a sprinkle of salt. Stir and fry for a minute, and remove from heat and set aside. The peppers should still be crisp. After the peppers rest for a few minutes, they will excrete some liquid (amount varies with different peppers). Drain and discard the liquid. When beef has rested 15 minutes and peppers are ready, mix cornstarch into marinated beef.
  • 3. Heat 2 tablespoons oil on high in a wok or similar. Add beef and stir quickly, separating the slices. When beef has started turning color with some pink spots remaining, add vegetarian oyster sauce. Stir quickly to distribute. Add peppers back in. Give a few good tosses and serve with rice immediately.

Time 3h

Yield 8 servings

Number Of Ingredients 16

5 tablespoons olive oil
3 pounds skirt or flank steak, cut into large pieces
2 bay leaves
1/2 onion, peeled and studded with 4 whole cloves
Kosher salt and freshly ground black pepper
2 green bell peppers, seeded and thinly sliced
2 red bell peppers, seeded and thinly sliced
3 garlic cloves, roughly chopped
1 red onion, thinly sliced
1 teaspoon dried oregano
1 teaspoon ground cumin
3 tablespoons tomato paste
1 (14 to 16-ounce) can whole tomatoes with juice, chopped
1/2 cup pimiento-stuffed Spanish olives, drained and halved
1 cup frozen peas, thawed
Serving Suggestion: White rice

Steps:

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the steak with salt and pepper and cook, turning once, until well browned.
  • Transfer the steak with 1 bay leaf and the clove-studded onion to a large pot, with a tight-fitting lid, and cover with water by 1 inch. Bring to a boil, lower the heat, and simmer, covered, until tender, about 1 1/2 hours. Remove from the heat and cool the meat in the liquid for about 30 minutes. Transfer meat to a platter and cover, to keep warm. Reserve 2 cups of the cooking liquid. (Stew may be made up to this point 1 day ahead.)
  • Meanwhile, return the skillet to medium-high heat and heat the remaining 3 tablespoons oil. Add the remaining bay leaf, peppers, garlic, onion, oregano, and cumin and cook, stirring, until softened and fragrant, about 8 minutes. Add the tomato paste and cook, stirring, until dark red, about 1 minute more. Add the 2 cups reserved liquid, tomatoes, and olives and bring to a boil. Lower the heat and simmer until slightly thickened, about 10 minutes.
  • While the vegetables are cooking, pull the steak into shreds. Add the steak and peas to the vegetable mixture and cook, stirring, until just heated through. Season with salt and pepper, to taste. Serve with white rice.

Dinner time shortcut

You can cook the rice or noodles while the steak is cooking, and then quickly sauté the peppers and steak together at the end. This is a great way to save time on busy weeknight.

Best cut of steak to use

For this recipe, you'll want to use a cut of steak that is relatively thin and cooks quickly. Some good options include flank steak, flat iron steak, or top sirloin. These steaks are all relatively inexpensive, and they have a great deal of flavors when they're properly seasoned and swiftly sautéed like you do in this recipe.

Your level of heat

If you don't like spicy food, you can omit the chili peppers from this recipe. You can also use a different type of sweet peppers, such as red peppers or yellow peppers.

Serve it well

Serve the finished dish immediately over hot rice or noodles. You can also serve it with a side of steamed broccoli or baby carrots. This dish will easily keep in the fridge for three to four days, and you can also make it ahead and freeze it for later. If you freeze it, you have to defrost it completely prior to reheating it.

You can change the hue of the dish based on your choice of peppers. If you use all red peppers it will be fiery red; if you use all yellow peppers it will be golden yellow and if you use a mix of herbs, the visual result will be more picturesque.

Fun facts about peppers

Bell peppers are available in a multitude of colors: purple/black, white, yellow, orange, and red and all are part of the same species called _Capsicum_.

Peppers come in differing degrees of pungency or heat. The hottest part of the peppers is not the seeds nor the white pithy ribs, it's the placenta (where the seeds and pith are attached) that runs up and down the inside of the peppers. Therefore, the hottest peppers are the ones with the most placenta such as Scotch bonet peppers. The least hot peppers have very little placenta, like the green peppers.

Conclusion

This recipe for Beef and Bell Pepper Stir-Fry is an easy, quick, and delicious meal that is perfect for busy weeknight. It is healthy, easy to make, and can be customized to your own taste and spice level. You can use all red peppers for a fiery red dish, all yellow peppers for a golden yellow dish, or a mix of both. You can also add other ingredients to the dish, such as broccoli, carrots, or snow peas.
