TANGERINE STIR-FRIED BEEF WITH ONIONS AND SNOW PEAS
This is a yummy stir-fry. The tangerine adds a very refreshing flavor to the dish. 2 to 3 oranges can be substituted for the tangerines. I serve with rice. Prep time does not include marinade time. This is adapted from Cooks Illustrated, Nov. 2007 issue. Hope you enjoy!

Tips for Cooking Beef and Snow Peas
- Choose tender cuts of beef: Flank steak, sirloin steak, and tenderloin are all good choices for stir-fries. If you're using a tougher cut of beef, such as chuck steak, you'll need to marinate it or braise it before cooking.
- Slice the beef thinly: This will help it cook quickly and evenly.
- Use a hot pan: A hot pan will help the beef sear and develop flavor.
- Don't overcrowd the pan: If you overcrowd the pan, the beef will steam instead of sear.
- Cook the beef in batches if necessary: If you have a lot of beef to cook, cook it in batches so that you don't overcrowd the pan.
- Add the snow peas last: Snow peas cook quickly, so add them to the pan towards the end of cooking.
- Serve immediately: Beef and snow peas are best served immediately after cooking.
Conclusion
Beef and snow peas is a delicious and healthy dish that is easy to make. By following these tips, you can create a stir-fry that is packed with flavor and nutrition. Serve with rice, noodles, or your favorite vegetables. Enjoy!
