DORITOS CASSEROLE WITH GROUND BEEF
Doritos Casserole with Ground Beef is an easy dinner recipe the whole family will love. This hearty casserole is loaded with ground beef, cream cheese, corn, black beans, shredded cheese and topped with crumbled Doritos.

- Preheat oven to 400F.
- In a large frying pan over medium-high heat, cook ground beef with a dab of butter or margarine.
- Add the diced onions to the pan with the beef while it's cooking.
- Dump the cream cheese, mushroom soup and chili sauce into a large mixing bowl.
- Mix with an electric mixer until fully combined.
- Once the ground beef is fully cooked add the ground beef and onions to the mixing bowl with the cream cheese mixture. Stir well.
- Add the corn and black beans to the bowl. Stir.
- Set aside 1/4 cup of green onions and add the remaining green onions to the mixing bowl.
- Add 2 cups of the shredded cheese to the mixing bowl.
- Add the salt, pepper and garlic powder to the mixing bowl. Stir until all of the ingredients are fully combined.
- Pour the mixture into a greased 9 x 13 inch baking dish and spread it out evenly.
- Sprinkle the crumbled Doritos on top of the beef mixture.
- Sprinkle the remaining cup of shredded cheese and 1/4 cup of chopped green onions on top of the Doritos.
- Place the dish in the oven and bake the casserole until the cheese on top is completely melted and just starting to brown. 11-13 minutes.
- Serve and enjoy!

- Preheat oven to 350 degrees.
- In a large skillet brown ground beef and onions until cooked through. Drain off fat.
- Put back into skillet and sprinkle in packet of taco seasoning and coat ground beef. Add in water and stir until combined. Cook until sauce has thickened. About 3 minutes. Turn off heat.
- Add in salsa, soup, and sour cream and mix until combined.
- Pour in cheddar cheese and stir until melted into beef mixture.
- In a casserole dish lightly crush up 1/3 bag of Doritos. Pour 1/2 of beef mixture on top. Repeat.
- Top with remaining 1/3 of Doritos and colby jack cheese.
- Cover with foil sprayed with cooking spray (this keeps the cheese from sticking). Bake for 25 minutes covered. Remove foil and bake for 20 additional minutes.

It may have never crossed your mind that Doritos are simply flavored tortilla chips. Granted, the tortilla chips that are Doritos are definitely unique. For most of us who grew up snacking on the beloved Nacho Cheese or Cool Ranch flavors, we didn't always make the connection that these seasoned chips were akin to the chips we love with salsa. But it's this similarity that makes Doritos a reasonable ingredient for a corn tortilla-style casserole.Our Doritos Casserole takes the familiar base of cooked onion, garlic, and ground beef and seasons it with a packet of taco seasoning. We mix in a can of diced fire-roasted tomatoes for both acidity and smokiness. A can of chopped green chiles adds some flavor and spice, and a can of cream of chicken soup dissolves into the remaining ingredients to give a rich and savory quality to the mixture. We layer this mixture with crushed Doritos and cheddar cheese, and as the casserole bakes, the Doritos soften just a bit from the moisture in the meat. - Heat vegetable oil in a large skillet over medium-high. Add onion and sauté until softened and translucent, about 6 minutes. Add garlic and cook for 1 minute. Add beef and break up with a spoon; cook until completely browned. Add taco seasoning and stir to incorporate. Mix in tomatoes, green chiles, and cream of chicken, and stir occasionally over medium-high until liquid thickens, about 5 minutes. Remove from heat.
- Transfer chips from the Doritos bag to a large bowl. Use your hands to break up the chips until the pieces are small but not quite crumbs.
- Preheat oven to 350°F. Pour one-third of the meat mixture in the bottom of a 9- x- 13-inch baking dish. Sprinkle 1/3 cup shredded cheese over the layer of meat. Sprinkle half of the crushed Doritos evenly on top of the shredded cheese. Pour another third of the meat mixture on top of this Dorito layer and spread evenly over the chips. Repeat the layering process with another 1/3 cup cheese and remaining Doritos. Pour remaining meat mixture over top and spread evenly. Sprinkle remaining 2/3 cup shredded cheese on top. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the aluminum foil and bake until the cheese begins to brown, about 20 minutes.
- Allow to cool slightly before serving with fresh cilantro to garnish.

- Cook ground beef, onion, and taco seasoning together. Next add 1 can cream of chicken soup and Rotel. In a 13 x 9 pan, crush a couple of handfuls of Doritos in the bottom, enough to cover. Now spoon half the meat mixture on top. Now add 1 cup shredded Mexican blend cheese. Crush more chips, add the rest of the meat mixture and top with cheese. Now finish with more crushed chips and the last cup of cheese. Slide it in the oven at 350°F for 25 minutes.

- 1. Preheat oven to 375 degrees. Spray 9×13 inch casserole dish with nonstick cooking spray
- 2. Start browning your ground beef over medium heat. After 3-4 minutes of browning add your onions. Cook until the beef is browned and the onions are tender. Add the garlic and cook for 1 minute stirring constantly. Plate the hamburger mixture.
- 3. Melt the butter over medium low heat. Whisk in the flour and continue cooking 2-3 minutes while whisking. Add the milk and chicken broth alternating between the two. Simmer until thickened. Reduce the heat to low and whisk in the taco seasoning and 1 1/2 cups cheddar cheese. Continue whisking until melted and smooth. Add the cooked hamburger mixture to the cheese sauce and stir to combine.
- 4. Slightly crush a couple handfuls of chips and place them in the prepared casserole dish. Spoon half of the beef mixture over the chips and add another layer of crushed chips. Spoon the rest of the beef mixture over the chips. Top with one more layer of crushed chips. Sprinkle with the remaining Cheddar and Monterey Jack Cheese.
- 5. Cover the casserole dish and bake for 20 minutes. Remove the cover and bake for another 15 minutes or until the cheese is melted and the casserole is heated through. Finally top with chopped cilantro, sliced tomatoes, and jalapeno rings. Serve with a heaping tablespoon sour cream.

- Preheat the oven to 350°F Spray a 9x13 baking dish with cooking spray.
- Brown the hamburger until no longer pink, drain excess grease then sprinkle with salt & pepper. Remove from the heat & stir in the rest of the ingredients except the Doritos.
- Layer half the Doritos along the bottom of the pan. Gently spoon the beef mixture over. Break up the remaining Doritos then scatter over the beef.
- Note: You don't want them to be crumbs but in bite size pieces.
- Bake in the oven for 20 minutes. Serve hot.
