1 pound sliced beef or calf's Liver, cut 1/4 to 3/8 inch thick
3/4 cup fat-free milk
2 large sweet onions, such as Vidalia, thinly sliced
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil, divided
1 tablespoon butter, divided
1/4 cup Horseradish Balsamic Sauce

Steps:

  • Rinse Liver using cold water; place in medium bowl. Completely cover with milk. Cover and refrigerate 30 minutes.
  • Meanwhile, prepare Horseradish Balsamic Sauce.Horseradish Balsamic Sauce:Combine 2/3 cup prepared creamy horseradish and 1/3 cup balsamic vinegar in small bowl. Cover and refrigerate until ready to use.
  • Heat large nonstick skillet over medium-high heat until hot. Add onions; cook and stir 15 to 20 minutes until soft and caramelized, reducing heat, if necessary. Remove onions from skillet; set aside and keep warm.
  • Remove liver from milk; discard milk. Combine flour, salt and pepper in small bowl. Using sifter, evenly dust each piece of liver with seasoned flour mixture. Melt 1-1/2 teaspoons oil and 1-1/2 teaspoons butter in same skillet until hot. Add half of liver; cook 3 to 4 minutes on each side until evenly browned on outside, but pink inside. Repeat with remaining 1-1/2 teaspoons oil, 1-1/2 teaspoons butter and remaining liver.
  • Serve liver and onions with Horseradish Balsamic Sauce.

3 tablespoons ketchup
2 tablespoons spicy brown mustard
2 tablespoons teriyaki sauce
2 tablespoons Worcestershire sauce
1 cup water
3 (10 ounce) packages liver
3 tablespoons oil
1 large onion

Steps:

  • Mix together brown sugar, ketchup, mustard, teriyaki sauce, worcestershire sauce, and water.
  • Slice liver into strips. Marinate for 1 hour in sauce.
  • Slice onion into thin rings. Saute onions in oil. Add marinated liver. Brown. Simmer for 15 minutes or until done.

1 onion, diced
2 teaspoons white sugar
1 pound calves' livers
¼ cup all-purpose flour
1 tablespoon butter
salt and pepper to taste

Steps:

  • In a medium skillet, melt butter over medium heat. Stir in onion and saute until softened. Stir in sugar and continue to cook until onion caramelizes.
  • Rinse liver and remove thin outer membrane. Slice liver into 1/4 to 1/2 inch thick slices.
  • Heat remaining butter in a medium skillet over medium heat

1 1/2 lbs liver
1/4 cup flour
3 slices bacon, halved
1/2 cup onion, sliced
1/2 cup beef broth
1/4 cup water
1/8 teaspoon pepper
1/8 teaspoon tarragon

Steps:

  • Coat liver with flour; set aside.
  • Brown bacon; drain on paper towels.
  • Brown onions in drippings.
  • Brown liver quickly in same skillet, about 1 minute on each side.
  • Drain fat.
  • Combine broth, water, liver, pepper and tarragon.
  • Cover and simmer 20 minutes until liver is fork tender.
  • Uncover; top with bacon.
  • Simmer uncovered 5 to 10 minutes until sauce is consistency of gravy.

1 ½ cups milk, or as needed
¼ cup butter, divided
2 large Vidalia onions, sliced into rings
2 cups all-purpose flour, or as needed
salt and pepper to taste

Steps:

  • Gently rinse liver slices under cold water, and place in a medium bowl. Pour in enough milk to cover. Let stand while preparing onions. (I like to soak up to an hour or two - whatever you have time for.) This step is SO important in taking the bitter taste of the liver out.
  • Melt 2 tablespoons of butter in a large skillet over medium heat. Separate onion rings, and saute them in butter until soft. Remove onions, and melt remaining butter in the skillet. Season the flour with salt and pepper, and put it in a shallow dish or on a plate. Drain milk from liver, and coat slices in the flour mixture.
  • When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan. Cook until nice and brown on the bottom. Turn, and cook on the other side until browned. Add onions, and reduce heat to medium. Cook a bit longer to taste. Our family prefers the liver to just barely retain a pinkness on the inside when you cut to check. Enjoy!

1 lb beef or veal liver, 1/2 to 3/4 inch thick

  • In 10-inch skillet, melt butter over medium-high heat. Cook onions in butter 4 to 6 minutes, stirring frequently, until light brown. Remove onions from skillet; keep warm.

1/4 teaspoon salt
1 pound beef liver, cut into bite-size pieces
4 teaspoons canola oil, divided
1 cup thinly sliced onion
1/2 cup chopped celery
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 bay leaf
2 tablespoons chopped fresh parsley
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon salt
1/4 teaspoon pepper
Hot cooked spaghetti
Grated Parmesan cheese

Steps:

  • Combine flour and salt; toss with liver. Heat 2 teaspoons oil in a skillet, cook liver until no longer pink. 1 pound beef or calf liver, fresh or frozen (thawed)
2 small onions, sliced then separated in rings
1 cup all-purpose flour
Cooking oil, as needed (I used vegetable oil)
1/2 tablespoon margarine or butter, optional
Salt and black pepper, to taste

Steps:

  • Heat a medium skillet over medium heat; then add 1/2 tablespoon margarine and 1 tablespoon oil to the skillet. When hot, add the onions and saute until tender and browned, stirring frequently so they don't burn. Transfer onions to a plate and season with a little salt and pepper; set aside. (I set them in the microwave until needed.) Place the flour into a rimmed plate or pan and season with a little salt and pepper (not too much since the liver will be salted after it is cooked). Coat liver with the flour mixture and set pieces aside on a plate. Heat a large skillet over medium-high heat, then add about 1/4 cup oil; when hot, add the liver and brown both sides, turning only once. (Do not overcook it or it will be dry and hard. Time will depend on thickness of liver.) Remove cooked liver to a serving plate and season with salt and keep warm. Continue frying any remaining liver, adding more oil, if needed. Serve liver warm, topped with the sauteed onions and side dishes of choice.. mashed potatoes, buttered white rice, green peas or beans, etc.

1 pound fresh calf's liver
2 to 4 tablespoons butter, as desired
2 large Spanish onions, sliced lengthwise into thin strips
Salt and pepper, as desired
1 tablespoon vinegar, or as desired
Flour for dredging, seasoned with salt and pepper
2 to 4 tablespoons clarified butter for frying
2 tablespoons chopped parsley

Steps:

  • Trim liver of veins and membranes. Cut on the diagonal into wide, 1/4-inch slices.
  • Melt the butter in a large skillet. Fry the onions in the butter over medium heat, stirring often, until nicely browned, 10 to 15 minutes. Season to taste with salt, pepper and vinegar. Set aside.
  • Dredge liver pieces with seasoned flour, and shake off excess. In a second large skillet, melt the clarified butter over high heat, and when very hot, drop in the liver pieces, a few at a time. Fry 30 seconds or so on each side. Remove to a serving dish. Liver should still be raw in the center.
