1 medium carrot, cut into julienne strips
1 medium onion, chopped (1/2 cup)
1 medium celery stalk, chopped (1/2 cup)
6 cups water
2 teaspoons vegetable or chicken bouillon granules
1 can (19 oz) Progresso™ red kidney beans, drained, rinsed
1 package (10 ounces) dried cheese-filled tortellini (2 1/2 cups)
1 tablespoon chopped fresh parsley
1/4 teaspoon pepper
6 tablespoons basil pesto
6 tablespoons freshly grated Parmesan cheese

Steps:

  • Melt butter in 4-quart Dutch oven over medium-low heat. Cook garlic, carrot, onion and celery in butter 10 minutes, stirring occasionally.
  • Stir in water and bouillon granules. Heat to boiling; reduce heat. Stir in beans and tortellini. Cover and simmer about 20 minutes, stirring occasionally, until tortellini are tender.
  • Stir in parsley and pepper. Top each serving with pesto and cheese. Serve immediately.

1 pound Italian sausage
1 cup chopped onion
2 cloves garlic, minced
5 cups beef broth
½ cup water
½ cup dry red wine
8 ounces fresh tortellini pasta
1 cup sliced carrots
2 cups stewed tomatoes
½ teaspoon dried basil
½ teaspoon dried oregano
8 ounces tomato sauce
1 ½ cups sliced zucchini
2 green bell peppers, seeded and cubed
3 tablespoons chopped fresh parsley

Steps:

  • Remove casings from sausage. Brown sausage and cook until crumbly. Remove meat from pot. Reserve 1 tablespoon drippings.
  • Cook onion and garlic in the drippings until tender. Add broth, water, wine, carrots, tomatoes, basil, oregano, tomato sauce, and the cooked sausage. Bring to a boil; reduce heat and simmer uncovered 30 minutes.

1/2 pound beef top sirloin steak, cut into 1/2-inch cubes

4 cups chicken stock

1 cup black beans, cooked, drained and rinsed

Steps:

1 package (17 oz.) fully cooked Beef Roast Au Jus or 3 cups of cooked roast with reserved juices/gravy
2 Tbsp butter or margarine
1/2 medium sweet onion
2 Tbsp all purpose flour
2 cans (14 1/2 oz. each) beef broth
1 can (19 oz.) navy or light red beans drained
1 jar (26 oz.) tomatoe-basil pasta sauce
1 package (9 oz.) refrigerated cheese-filled tortellini
1 package (6-7 oz.) fresh baby spinach

Steps:

  • Chop roast, reserve juices, and set aside.
  • Melt butter in a soup pot over medium to high heat; add onion, and saute 2 minutes. Add flour; cook, stirring constantly, 1 minute.
  • Gradually add beef broth, and cook, stirring constantly, until mixture begins to thicken. Stir in roast, reserved juices, beans and pasta sauce.
