1/4 teaspoon pepper
3 tablespoons reduced-sodium soy sauce, divided
3 teaspoons olive oil, divided
1 medium red onion, cut into wedges
3 garlic cloves, minced
1 jar (7 ounces) roasted sweet red peppers, drained and cut into strips
1/4 cup dry red wine or reduced-sodium beef broth
6 tablespoons fat-free ranch salad dressing
6 flour tortillas (8 inches)
1-1/2 cups torn iceberg lettuce
1 medium tomato, chopped
1/4 cup chopped green onions

Steps:

  • In a large nonstick skillet coated with cooking spray, saute beef, pepper and 2 tablespoons soy sauce in 2 teaspoons oil until meat is no longer pink. Remove and keep warm. , Saute the onion and garlic in remaining oil for 1 minute. Stir in the red peppers, wine and remaining soy sauce; bring to a boil. 1 pound ground beef
½ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons butter
1 large onion, sliced
6 teaspoons mayonnaise
6 slices rye bread
6 slices sharp Cheddar cheese

Steps:

  • Season ground beef with salt and pepper and divide into 3 equal-sized balls. Shape each ball as close as possible to the shape of the bread. Make an indentation in the center of each patty with your thumb.
  • Melt butter in a skillet over medium heat and cook onion until soft and translucent, 5 to 8 minutes. Remove from the skillet and divide into 3 equal portions. Place beef patties into the same skillet and cook until desired doneness, 3 to 5 minutes per side.

Tweaked it for our taste, added additional ingredients and came up with this. They were inhaled. You could substitute deli roast beef or prepackaged beef lunchmeat if you don't have leftovers. Cook time is refrigerator time.

1 cup shredded leftover roast beef
3 green onions (chopped, include some green)
1 (8 ounce) package cream cheese
2 tablespoons milk
1/8 teaspoon liquid smoke
1/3 cup shredded sharp cheddar cheese
4 burrito size flour tortillas

Steps:

  • Bring Cream Cheese to room temperature.
  • Add the milk and blend with hand mixer.
  • Blend in green onions, shredded beef, Liquid Smoke, and cheese until thoroughly mixed.
