BEER CHEESE SOUP IN A BREAD BOWL WITH KIELBASA "CROUTONS"

Beer Cheese Soup in a Bread Bowl with Kielbasa

Provided by Jeff Mauro, host of Sandwich King

Time 55m

Yield 4 servings

Number Of Ingredients 19

1 tablespoon vegetable oil
6 ounces kielbasa, cut into 1/2-inch dice
3 tablespoons unsalted butter
2 carrots, finely diced
2 stalks celery, finely diced
1 small onion, finely diced
2 cloves garlic, minced
1/2 teaspoon dry mustard powder
Pinch cayenne pepper
4 small round boules (about 7 inches each)
3 tablespoons all-purpose flour
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
2 cups chicken stock, warmed
1 bottle pale ale, pilsner or lager
3 cups sharp yellow Cheddar, shredded
5 ounces Gruyere, shredded
Kosher salt and freshly ground black pepper
3 tablespoons finely chopped fresh chives

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the kielbasa and cook until browned and crisp, 1 to 2 minutes. Transfer to a paper towel-lined plate and set aside.
  • Melt the butter in a large Dutch oven over medium-low heat. Add the carrots, celery, onion, garlic, mustard powder and cayenne. Cook the vegetables until tender and translucent, about 15 minutes.
  • Meanwhile, prepare the bread bowls. Using a sharp knife, slice the top off of each boule to use as a topper. Hollow out the middle with a fork or your fingers, leaving a thick bread shell. Save the removed bread for another use.
  • Sprinkle the flour over the vegetables and cook, stirring constantly, about 1 minute. Add the Dijon mustard and Worcestershire. Pour in the stock and beer and simmer until the alcohol cooks out, about 5 minutes.
  • Puree the soup with an immersion blender until smooth. Add the Cheddar and Gruyere and stir until the cheese is melted. Season with salt and pepper. Ladle into the bread bowls and serve immediately, topped with the kielbasa croutons and chives. Use the bread toppers for dipping, if desired.

Beer Cheese Soup (Aka Leinie's Beer Cheese Soup) image

This Wisconsin Beer Cheese Soup is my absolute favorite! My friends and I can't get enough; it's excellent for parties, tale gaiting, in front of the fireplace or while watching a good movie. And somehow, it tastes even better when it is snowing outside. The Leinie's Red gives it a unique flavor that will surpass standard "beer" recipes.

BEER CHEESE SOUP (BIG RIVER GRILLE) RECIPE

Beer Cheese Soup (Big River Grille) Recipe image

Provided by ArmySister

Number Of Ingredients 12

3/4 cup butter
1/2 cup thinly diced celery
1/2 cup flour
5 cups chicken stock
2 tablespoons Parmesan Romano Cheese
1/4 teaspoon Accent (MSG)
1/2 cup thinly diced carrots
1/2 cup thinly diced onion
1/2 teaspoon dry mustard
6 ounces cheddar cheese
1 bottle (11 oz size) beer
salt and pepper to taste

Steps:

  • Melt butter; saute vegetables until done but not browned. Blend in flour, dry mustard and MSG. Slowly add chicken stock, bring to a boil; cook, stirring, 5 minutes. Blend in cheddar cheese, Parmesan-Romano cheese, and beer. Let simmer over low heat for 30 minutes. Season with salt and pepper to taste.

Tips:

  • Use a good quality beer that you enjoy drinking. The flavor of the beer will come through in the soup, so make sure it's something you like.
  • Don't be afraid to experiment with different types of cheese. A good sharp cheddar is a classic choice, but you can also try using a mix of cheeses, such as Gruyère, Swiss, or Gouda.
  • Be patient when melting the cheese. It's important to let the cheese melt slowly and evenly, so don't rush the process.
  • Serve the soup immediately, while it's still hot and bubbly. You can garnish it with a sprinkle of fresh herbs, such as chives or parsley.

Beer cheese soup is a delicious and comforting dish that is perfect for a cold winter day. It's easy to make and can be tailored to your own taste. So next time you're looking for a quick and easy meal, give beer cheese soup a try. You won't be disappointed!
