GRILLED BRATWURST AND BEER
I found this recipe in a Weber BBQ cookbook and liked it for it's simplicity and for the fact that I could let them cook away on the grill with a minimum of supervision. My guests loved them! The next day, I re-grilled the leftovers and they were just as good, if not better, than they were the night before. My brats were quite large with 4 of them to a pound so the serving size here is approximate.

- Serve on buns with mustard and chopped onions.
- Leftover brats can be re-grilled right on the grill for several minutes, until hot.

BEER GLAZED BRATS AND SAUERKRAUT
I came up with this recipe, because simply simmering sausages in beer and onions tasted weak. I was looking for a more intense beer flavor with a little bite, and this is it. A very satisfying dish if you crave German flavor that's Americanized. We love this dish served on potato rolls with spicy hot German mustard, Swiss cheese, and ice cold beer on the side.

Steps:
- Crush celery seeds and caraway seeds in a mortar and pestle until ground; set aside.
- Place bratwursts into a large nonstick skillet over medium heat. Mix beer, brown sugar, dry mustard, onion powder, black pepper, dill weed, and crushed celery and caraway seeds in a bowl, stirring to dissolve brown sugar; pour over the brats. Bring to a boil and reduce heat to low; cover and simmer for 10 minutes.
- Uncover and raise heat to medium; boil the sauce until it reduces to a thick, syrupy liquid, about 20 minutes. Tilt skillet to roll brats in the sticky sauce until thoroughly coated. Transfer sausage to a platter and keep warm. Cook and stir sauerkraut in the same skillet to mix in any leftover sauce, 5 to 8 minutes. Transfer sauerkraut to a serving platter and top with cooked bratwurst.

Tips:
- Choose high-quality bratwurst: Look for bratwurst made with fresh, flavorful pork and spices. Avoid brands that contain fillers or preservatives.
- Score the bratwurst: This will help the glaze penetrate the sausage and create a crispy exterior.
- Use a flavorful beer: The beer you use will impart its flavor to the glaze, so choose one that you enjoy drinking. A dark beer will create a richer glaze, while a light beer will produce a lighter flavor.
- Simmer the glaze: This will help to thicken and caramelize the glaze, creating a sticky and delicious coating for the bratwurst.
- Grill the bratwurst over medium-high heat: This will help to create a nice sear on the outside of the sausage while cooking it through.
- Serve the bratwurst with your favorite toppings: Classic toppings include sauerkraut, mustard, and onions. You could also try something different, such as grilled pineapple or apple slices.
Conclusion:
Bratwurst is a delicious and versatile sausage that can be cooked in a variety of ways. Grilling bratwurst with a beer glaze is a great way to add flavor and moisture to the sausage. The wilted red cabbage slaw is a refreshing and tangy side dish that pairs perfectly with the bratwurst. This meal is perfect for a summer cookout or a casual dinner party.
