BEET GREEN, RICE AND RICOTTA BLINIS

Beet Green, Rice and Ricotta Blinis image

The idea for this comes from Deborah Madison's Chard, Ricotta and Saffron Cakes, from her amazing and wonderful new book, "Vegetable Literacy," which explores vegetables from 12 families of the vegetable kingdom. Ms. Madison is always inspiring, and I think this is her best book to date. These are chunkier than pancakes because of all the rice, but they are more cake than fritter. Let them rise on the griddle - don't press them down - and allow them to cook for 3 minutes on each side. I like to serve them with a dollop of tomato sauce. You can make smaller cakes to serve as hors d'oeuvres or snacks.

Time 20m

Yield 24 about 2 1/2-inch cakes, serving 6 to 8

Number Of Ingredients 14

3/4 pound beet greens, or a mix of beet greens and other greens, such as chard or mustard greens, washed, stemmed and coarsely chopped (6 cups tightly packed)
1 cup (8 ounces) ricotta cheese
2 eggs, beaten
1/2 cup low-fat milk (2 percent)
5 tablespoons grated Parmesan
1/2 cup whole-wheat pastry flour or white whole-wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup cooked brown or white rice, preferably medium- or short-grain
2 tablespoons finely chopped chives
2 teaspoons finely chopped marjoram
Freshly ground pepper
Olive oil for the pan or griddle
Marinara sauce for serving (optional)

Steps:

  • Steam the greens above an inch of boiling water for 1 to 2 minutes, just until wilted. Remove from the heat, allow to cool and squeeze out excess water. Chop fine.
  • In a large bowl, beat together the ricotta, eggs, milk and Parmesan. Sift together the flour, baking powder and salt and whisk into the ricotta mixture. Stir in the greens, rice, herbs and pepper. The mixture will be thick.
  • Heat a griddle or a heavy nonstick skillet over medium-high heat. Brush with olive oil, enough to coat the bottom, and drop the batter in by the heaped tablespoon. Cook for about 3 minutes, until dark brown and nicely risen, and turn over. Cook for another 2 to 3 minutes, until brown on the other side. The pancakes will be moist in the middle, but there should not be a raw flour taste. Remove from the heat and serve, or cool on a rack and heat later in a medium-low oven. Serve with a dollop of tomato sauce.

SPAGHETTI WITH BEET GREENS

Spaghetti with Beet Greens image

Provided by Food Network Kitchen

Time 30m

Number Of Ingredients 7

Kosher salt
12 ounces spaghetti
1 1/4 pounds beet greens, stems removed and reserved
1/3 cup olive oil
6 cloves garlic, thinly sliced
1/4 to 1/2 teaspoon crushed red pepper flakes
2 tablespoons fresh ricotta or ricotta salata cheese, or Parmesan shavings

Steps:

  • 1. Bring a large pot of cold water to a boil over high heat and salt it generously. Add the spaghetti and boil, stirring occasionally, until al dente, about 9 minutes. Drain, reserving about 1/2 cup of the cooking water.
  • 2. Meanwhile, cut the beet green stems into 2-inch pieces. Cut the larger leaves into wide ribbons; leave the smaller ones whole. Swish the stems and then the leaves in a big bowl of cold water to clean (in batches if necessary); lift them from the bowl with your fingers, shake them off and blot with a paper towel-they don't have to be really dry.
  • 3. Put the olive oil and garlic in a large skillet over medium-low heat. Cook the garlic until golden, stirring occasionally, 4 to 5 minutes. Remove the garlic with a slotted spoon and drain on a paper towel. Increase the heat to medium; add the stems and season with salt. Cook, stirring occasionally, until you can insert the tip of a knife into the stems without resistance, 3 to 4 minutes. Add the red pepper flakes and cook, stirring, 30 seconds.
  • 4. Turn the heat to medium-high, add the beet greens and cook, tossing occasionally, until the greens are coated with oil and just starting to wilt. Season with salt and cook until the leaves are wilted and tender, about 3 minutes. Reduce the heat to medium-low.
  • 5. Pour the pasta on top of the greens and salt lightly. Toss with tongs and add the reserved pasta water. Divide among 4 pasta bowls and top with reserved garlic slices and desired cheese.

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Number Of Ingredients 8

1 tablespoon plus 1/4 teaspoon salt
1 pound string beans, stem ends trimmed
2 ounces ricotta salata cheese, crumbled
20 small fresh basil leaves
1/2 teaspoon Dijon mustard
1 tablespoon red-wine vinegar
3 tablespoons extra-virgin olive oil
1/8 teaspoon freshly ground black pepper

Steps:

  • Bring a large saucepan of cold water to a boil. Add 1 tablespoon salt and trimmed beans. Cook until beans are just tender, about 4 minutes. Remove from heat, drain, and immediately plunge beans into an ice-water bath to stop the cooking process. Drain, pat dry, and place in a large bowl along with ricotta salata and basil leaves.
  • In a small bowl, whisk together mustard, vinegar, olive oil, remaining 1/4 teaspoon salt, and pepper.
  • Pour vinaigrette over bean mixture and toss well.

Tips:

  • Prep the Ingredients Efficiently: Before starting, measure and prepare all ingredients to ensure a smooth cooking process.
  • Control the Heat: Use medium heat for cooking the blini batter to prevent burning and ensure even cooking.
  • Cook in Batches: Divide the batter into smaller batches to avoid overcrowding the pan and achieve evenly cooked blinis.
  • Flip Carefully: Once bubbles form on the surface and the edges start to set, carefully flip the blini using a spatula to cook the other side.
  • Keep Warm: Transfer cooked blinis to a warm oven or covered plate to maintain their warmth while preparing the remaining batter.
  • Use Fresh Greens: For the best flavor and texture, use fresh beet greens in the recipe.
  • Adjust Heat for the Filling: When cooking the filling, use medium-low heat to prevent burning the ricotta and ensure even cooking of the vegetables.
  • Garnish Generously: Before serving, top the blinis with a generous amount of grated Parmesan cheese, chopped fresh herbs, and a drizzle of olive oil for an extra burst of flavor.

Conclusion:

These beet green-infused rice and ricotta blinis offer a delightful combination of flavors and textures, making them an excellent appetizer or light meal.
