ROASTED CARROTS

This dish is inspired by a roasted carrot antipasto I recently sampled at Oliveto Cafe in Oakland, Calif. The roasted carrots were tossed with lots of parsley and thyme, and I loved the way those bitter herbs offset the sweetness of the carrots.

Tips:

  • Choose the right carrots: Use fresh, tender carrots for the best flavor and texture. Avoid large, woody carrots, as they will not cook evenly.
  • Peel and cut the carrots evenly: This will help them cook evenly. If the carrots are different sizes, cut them into similar-sized pieces so they cook at the same rate.
  • Use a variety of seasonings: Don't just stick to salt and pepper. Try adding other spices, such as cumin, coriander, or paprika, to give the carrots a more complex flavor.
  • Roast the carrots at high heat: This will help them caramelize and develop a slightly crispy texture.
  • Don't overcrowd the pan: If you overcrowd the pan, the carrots will steam instead of roast and they will not brown properly.
  • Toss the carrots halfway through roasting: This will help them cook evenly and prevent them from sticking to the pan.
  • Serve the carrots immediately: Roasted carrots are best served hot out of the oven. You can also store them in the refrigerator for up to 3 days.

Conclusion:

Roasted carrots are a delicious and healthy side dish that can be enjoyed by people of all ages. They are easy to make and can be customized to your own taste preferences.
