BROUILLADE OF MUSHROOMS (OR THE BEST SCRAMBLED EGGS YOU'LL EVER EAT)

Brouillade of Mushrooms (or the best scrambled eggs you'll ever eat) image

I love this recipe. The title makes it sound so much better than plain old scrambled eggs and appropriately so because it IS much better than just scrambling a few eggs in a pan, without any garnishes. And not much more work either...

8 fresh eggs

THE BEST SCRAMBLED EGGS

The Best Scrambled Eggs image

For silky, outrageously good scrambled eggs, cook them low and slow. This method, which Mark Bittman learned from James Beard, is very low and very slow: you place the eggs over very low heat, stirring frequently, breaking up the curds as they form. The results are without compare. Make them for breakfast on the weekend, while the coffee brews and the bacon fries.

Time 40m

Yield 2 servings

Number Of Ingredients 4

4 or 5 eggs
Salt and freshly ground black pepper
2 tablespoons cream
2 tablespoons butter or extra virgin olive oil

Steps:

  • Crack the eggs into a bowl and beat them, just until the yolks and whites are combined. Season with salt and pepper and beat in the cream.
  • Put a medium skillet, preferably non-stick, over medium heat for about 1 minute. Add the butter or oil and swirl it around the pan. After the butter melts, but before it foams, turn the heat to low.
  • Add the eggs to the skillet and cook over low heat, stirring occasionally with a wooden spoon. At first nothing will happen; after 10 minutes or so, the eggs will begin to form curds. Do not lose patience: Keep stirring, breaking up the curds as they form, until the mixture is a mass of soft curds. This will take 30 minutes or more. Serve immediately.

SCRAMBLED EGGS
4 large eggs
1/4 c water
salt and pepper to taste
FOR FRYING
1 tsp olive oil
2 tsp butter

Steps:

  • 1. Briskly beat the eggs, salt, pepper and water together with a fork or wire whisk (about 1 minute).
  • 2. Put oil in skillet to coat the pan well. Add butter. Heat the skillet, when butter is melted, use spatula to spread it around skillet. Add the eggs.
  • 3. Cook the eggs over medium heat. Gently push and turn over the eggs as they solidify. Don't over cook or brown! The eggs should be very moist, fluffy, cooked and not look dry at all.
  • 4. *** I make these frequently, and this is enough eggs for my family for breakfast! We also make breakfast tacos and breakfast sandwiches.

Tips:

  • Use fresh eggs. Fresh eggs will produce scrambled eggs that are more flavorful and fluffy.
  • Use the right amount of milk or cream. Adding a little bit of milk or cream to your scrambled eggs will make them creamier and more tender.
  • Don't overcook the eggs. Overcooked scrambled eggs are tough and dry. Cook them until they are just set, but still slightly runny in the center.
  • Season the eggs with salt and pepper. Salt and pepper are the essential seasonings for scrambled eggs. You can also add other herbs and spices, such as garlic powder, onion powder, or paprika.
  • Serve the scrambled eggs immediately. Scrambled eggs are best served hot and fresh. They can be served on their own or with a variety of sides, such as toast, bacon, sausage, or fruit.
