1 celery stalk, chopped
1 medium carrot, chopped
1/2 cup flat-leaf parsley
12 ounces ground beef chuck (90 percent lean), preferably pasture-raised
12 ounces ground pork, preferably pasture-raised
12 ounces ground veal, preferably milk-fed
1 large egg
3/4 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
Coarse salt and freshly ground pepper
2 tablespoons light-brown sugar

Steps:

1 yellow onion, finely chopped
3/4 cup old fashioned oats
1/2 cup tomato sauce plus 3 tablespoon tomato sauce
2 large eggs
2 tablespoons Worcestershire sauce
salt
fresh ground pepper
2/3 lb ground beef round (85% lean)
2/3 lb ground pork
2/3 lb ground veal
1 tablespoon unsalted butter
melted butter, as needed
10 ounces button mushrooms, thinly sliced
2 tablespoons all-purpose flour
2 cups beef stock, preferably homemade
fresh thyme sprig (to garnish)

Steps:

  • Preheat the oven to 375°F Lightly oil a 9-by-13 inch flameproof baking pan.
