Number Of Ingredients 4

22 ounces (5 1/2 cups) blueberries
1 tablespoon plus 1/2 teaspoon fresh lemon juice
1/4 cup sugar
1 quart vanilla ice cream

Steps:

  • Cook blueberries, lemon juice, and sugar in a medium saucepan over medium heat, stirring occasionally, until berries release their juices, about 10 minutes. Strain mixture through a fine sieve, pressing on berries to extract liquid. Discard solids.

Tips:

  • Prep ingredients in advance: Rinse and dry blueberries, juice lemons, and measure out other ingredients so you can easily assemble the popsicles.
  • Use ripe, sweet blueberries: This will ensure the popsicles have the best flavor.
  • Adjust sweetness to taste: If you prefer sweeter popsicles, add more honey or maple syrup. If you like them more tart, add more lemon juice.
  • Use popsicle molds with lids: This will help keep the popsicles from spilling in the freezer.
  • Freeze popsicles for at least 4 hours before serving: This will ensure they are solid and flavorful.
