SELA'S PINEAPPLE PIE
This is a classic from the Friendly Islands. It makes a huge amount but I tend to double the recipe, use a roasting dish as the pan...and it all goes. Great for big families, pot luck dinners. A Tongan treasure.

PARADISE PINEAPPLE PIE
This quick-to-fix recipe makes two yummy pies that will be a hit at any carry-in dinner. Lemon juice and crushed pineapple flavor the fluffy filling that's topped with a sprinkling of coconut. I like garnish with a sprig of mint. -Bonnie Baumgardner Sylva, North Carolina

Tips:
- Use fresh pineapple. Fresh pineapple has a more intense flavor than canned pineapple. If you're using canned pineapple, be sure to drain it well and reserve the juice.
- Don't overcook the pineapple. Overcooked pineapple will become mushy and lose its flavor. Cook it just until it's tender.
- Add a dash of nutmeg. Nutmeg is a classic spice that pairs well with pineapple. It adds a warm, slightly nutty flavor to the pie.
- Use a flaky pie crust. A flaky pie crust will help to create a crispy, golden-brown crust for your pie.
- Chill the pie before serving. Chilling the pie will help to set the filling and make it easier to slice.
Conclusion:
Bob's Pineapple Pie is a classic Southern dessert that is perfect for any occasion. It's easy to make and always a hit with family and friends. With its sweet and tangy filling, flaky crust, and creamy topping, this pie is sure to be a favorite. So next time you're looking for a special dessert, give Bob's Pineapple Pie a try. You won't be disappointed!
