Categories     Chicken Breast

Time 35m

Yield 4 serving(s)

Number Of Ingredients 12

1 tablespoon peanut oil
8 chicken thigh fillets (or 4 breast fillets)
1 tablespoon fish sauce
2 -3 tablespoons lime juice
1/2 teaspoon lime zest (optional)
2 tablespoons grated palm sugar or 2 tablespoons brown sugar
1 garlic clove, crushed
1 small red Thai chile, chopped finely (if you don't like your dish too hot, omit the seeds)
2 -3 baby bok choy, quartered lengthways
1 lime, cut into four slices
2 green onions, sliced thinly
1/4 cup firmly packed cilantro leaf

Steps:

  • Heat oil in large frying pan; cook chicken in batches until cooked through.
  • Meanwhile place fish sauce, lime juice (and zest), sugar, garlic and chilli in a screw-top jar and shake well.
  • Boil, steam or microwave bok choy until tender; drain.
  • Add lime slices to same frying pan and cook until both sides are browned.
  • Divide chicken among service plates.
  • The original recipe states to spoon the dressing over the chicken, and top with the onion and cilantro. I prefer to add the dressing and half the onion and cilantro to the pan and deglaze the pan for a minute or two, then spoon it onto the chicken, topping with the remainder of the onion and cilantro.
  • Serve with bok choy, lime slices and jasmine rice.

Yield Makes 6 servings

Number Of Ingredients 4

2 tablespoons (1/4 stick) butter
4 teaspoons minced garlic
12 baby bok choy
2 cups chicken stock or canned low-salt broth

Steps:

  • Melt butter in heavy large skillet over high heat. Add garlic; sauté 1 minute. Add bok choy and stock; simmer until bok choy is tender, turning occasionally, about 8 minutes. Season with salt and pepper.

Tips:

  • Choose fresh bok choy: Look for bok choy with crisp, dark green leaves and firm white stalks.
  • Wash the bok choy thoroughly: Rinse the bok choy under cold water, separating the leaves from the stalks to remove any dirt or grit.
  • Cut the bok choy into bite-sized pieces: Cut the bok choy stalks into 1-inch pieces and the leaves into 2-inch pieces.
  • Blanch the bok choy (optional): Blanching the bok choy helps to preserve its color and texture. To blanch the bok choy, bring a large pot of salted water to a boil. Add the bok choy and cook for 1-2 minutes, or until the leaves are bright green and the stalks are tender. Drain the bok choy and immediately transfer it to a bowl of ice water to stop the cooking process.
  • Make the Thai-style dressing: Combine all of the ingredients for the dressing in a small bowl and whisk until well blended.
  • Toss the bok choy with the dressing: Add the blanched or raw bok choy to a large bowl and pour the dressing over it. Toss to coat the bok choy evenly.
  • Serve immediately: Bok choy with Thai-style dressing is best served immediately, while the bok choy is still crisp and fresh.

Conclusion:

Bok choy with Thai-style dressing is a healthy and delicious side dish or light meal. It is a great way to enjoy the fresh flavors of bok choy and the tangy, spicy dressing. This dish is also very versatile and can be easily adapted to your own tastes. For example, you can add other vegetables to the dish, such as shredded carrots, bell peppers, or edamame. You can also adjust the amount of chili pepper in the dressing to make it more or less spicy. No matter how you choose to make it, bok choy with Thai-style dressing is sure to be a hit!
