Yield 3-4 serving(s)

Number Of Ingredients 13

1 head cauliflower
1 1/2 lbs beef stew meat
2 tablespoons olive oil
1/2 onion, diced
2 medium garlic cloves
1/4 cup fresh parsley, finely chopped
1 tablespoon tomato paste
1 beef bouillon cube
1 teaspoon cumin
1/2 teaspoon ginger
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon turmeric

Steps:

  • Pull off the green leaves surrounding the cauliflower. Then cut the bottom off & break the cauliflower into large pieces. Rinse & then place in a bowl to be used later.
  • Heat the olive oil in either a sauce pan or pressure cooker. Cook the beef in the oil until all the sides are brown.
  • Add enough water in the pot to cover the beef. At this point put everything into the pot except the cauliflower and cover with a lid. FETTUCCINE BOMBAY

Fettuccine Bombay image

A delicious variation on the usual tomato sauce. Italy meets India. Use a good quality curry powder. I find that 1 tablespoon of regular curry and 1 tablespoon of Malaysian curry powder tastes great. Most Asian markets carry the Malaysian Powder and I like it because it has some heat to it. You could also add chile powder or chiles if you want it 3-alarm spicy.

Time 1h

Yield 4

Number Of Ingredients 9

1 (16 ounce) package fettuccine
3 tablespoons olive oil
1 teaspoon cumin seeds
1 large onion, chopped
4 cloves garlic, crushed
2 skinless, boneless chicken breasts, cut into cubes
2 tablespoons curry powder, divided
1 (14 ounce) can diced tomatoes
2 tablespoons tomato paste

Steps:

  • Bring a large pot of lightly-salted water to a rolling boil over high heat; add the fettuccine and return to a boil. Cook uncovered until the pasta has cooked through, but is still firm to the bite, about 8 minutes; drain.
  • Heat the olive oil in a large skillet or wok over medium-high heat. Fry the cumin seeds in the hot oil until they begin to pop, 2 to 3 minutes. Cook and stir the onion and garlic in the oil until lightly browned, about 5 minutes. Add the chicken and continue cooking until the chicken is cooked through, 4 to 5 minutes. Season with 1 tablespoon curry powder; cook and stir another 3 to 4 minutes. Pour the diced tomatoes over the mixture and reduce heat to low. Stir in the tomato paste and remaining 1 tablespoon curry powder. Simmer 15 minutes.
  • Stir the cooked pasta into the sauce to coat. Simmer 2 to 5 minutes, until pasta is reheated.

Indian Cauliflower image

A spicy cauliflower served whole on a platter - looks like a red and yellow flower. Garam Masala can be found in Indian grocery stores and some traditional grocery stores. I like to serve peas and carrots lightly cooked in butter on the side of this dish.

Tips:

  • Choose the right cut of beef: Look for a tender cut, such as flank steak or skirt steak.
  • Marinate the beef: Marinating the beef helps to tenderize it and infuse it with flavor. You can use a variety of marinades, but a simple combination of soy sauce, garlic, and ginger works well.
  • Cook the beef quickly: Don't overcook the beef, or it will become tough. Cook it over high heat for a few minutes per side, or until it is cooked to your desired doneness.
  • Use fresh vegetables: Fresh vegetables will add flavor and color to your dish. Use a variety of vegetables, such as broccoli, carrots, and bell peppers.
  • Stir-fry the vegetables: Stir-frying the vegetables helps to retain their crunch and flavor. Cook the vegetables over high heat for a few minutes, or until they are tender-crisp.
  • Add the sauce: Once the vegetables are cooked, add the sauce. You can use a variety of sauces, but a simple combination of soy sauce, rice vinegar, and sesame oil works well.
  • Serve the dish immediately: Bombay beef is best served immediately, while it is still hot and crispy.

Conclusion:

Bombay beef is a delicious and easy-to-make dish that is perfect for a quick and easy weeknight meal. It is also a great way to use up leftover beef. With its tender beef, crisp vegetables, and flavorful sauce, Bombay beef is sure to be a hit with your family and friends.
