TRADER VIC'S BONGO BONGO SOUP

Number Of Ingredients 10

10 oz jar med. size oysters
1 T. chopped spinach, water squeezed out
2 T. Butter
1 qt. half & half
1/2 cup water
1 dash garlic salt
1 dash cayenne pepper
1/2 tsp. A-! sauce
1 heaping Tbs. cornstarch mixed with 1 Tbs water
Whipping cream for topping.

Steps:

  • Melt butter in saucepan. Add jar of oysters including liquid plus 1/2 cup water. Poach oysters until firm. Remove from fire, cool slightly, add chopped spinach and place entire mixture in blender. Belend until very smooth. In the meantime, bring half and half to a boil. Add oyster and spinach mixture to half & half, but do not boil. Thicken with the cornstarch and water mixture. Add all seasonings and salt and pepper to taste. To serve: Top each individual serving in bowl with one heaping Tbs. whipped cream and slip under broiler for a few seconds until cream settles and is golden brown.

Great for New Years. This is from Trader Vic's restaurants. I first had this back in the 1970's. Don't leave out the A-1 (it makes a difference) and don't sweeten the whipped cream. Unfortuneatly, the Seattle Trader Vic's closed many years ago. The closest one is in Atlanta or Tokyo.

8 oz samll raw oyester (jarred)
1/2 lb fresh baby spinach, chopped
1 qt milk
2 Tbsp butter
1 tsp steak sauce (a-1)
1 Tbsp cornstarch
1 tsp salt
1/2 tsp ground black pepper
1/2 tsp worcestershire sauce (or to taste)
1 dash(es) tabasco sauce (or to taste)
1/2 c whipping cream, whipped (unsweetened)

Steps:

  • 1. Preheat broiler unit of oven.
  • 2. Puree oysters and their juice, and spinach in a blender.
  • 3. Heat milk in a large saucepan to a simmer and add puree, butter and A-1 sauce. Return to simmer (Do not boil).
  • 4. Mix cornstarch with water and add to soup to thicken. Season with salt, pepper, worcestershire and tabasco.
  • 5. Ladle into 4 oven-proof bowls and garnish each with whipped cream. Put bowls under broiler until cream is browned. Serve.
