BONNIE'S FISH SANDWICHES
We enjoy homemade fish sandwiches and homemade tartar sauce for a quick evening supper. I usually serve them with my homemade potato "chips" using my oven baked fries recipe. It makes a delicious fast supper in under 30 minutes! Enjoy! Photo and recipe are my own.

Steps:
- MAKE THE TARTAR SAUCE AHEAD. Make one recipe of my Tartar Sauce so it has time to blend the flavors, 1/2 to 1 hour.
- PREPARE THE POTATOES. Cut into thick slices like the photo, about as thick as a french fry. Follow the recipe, place the potatoes on parchment paper and bake 35 minutes until golden brown and tender.
- PREPARE THE FISH. Blot the fish dry, dredge fish in the white cornmeal and black pepper, and drop into a nonstick frying pan with the oil that has been heated to medium high. Brown the fish to a nice golden brown on both sides. Do not salt. Keep warm.
- MAKE THE SANDWICHES. Your chips should be done by the time the fish is browned. To make the sandwiches, split the buns, place a filet on the bun and spoon the fresh tartar sauce on top. Add the potatoes, and dinner is ready! Enjoy!
THE ULTIMATE FISH FILLET SANDWICH
This recipe was inspired to me by Tyler Florence from the Food Network show. I wanted to share the recipe here but with a few changes that suits our families taste. Only changes that I made was replacing the tarter cream sauce he made, which was made up of mayonnaise, lemon juice, fresh parsley, basil, and chives, black pepper and olive oil and replacing it with my recipe for Recipe #114732 and replacing romaine lettuce for the arugula he used on the sandwich.

BONNIES FRIED FISH (SOLE, CATFISH OR TALAPIA)
I had a request from a member for a simple and easy recipe for fried fish. If you like crisp, crunchy fish, then this recipe is for you. I use this for sole, catfish or talapia. This is the recipe that I use all the time. My family loves it, and I have tried other batter recipes, but I keep coming back to this tried and true old favorite. I hope you enjoy it! This humble recipe is my own and so is the photo.

Steps:
- I use an electric skillet, but you can use a non-stick skillet. Pour in about 1/4 inch corn oil in the skillet over medium heat, or if using an electric skillet set it at 350 degrees, add a few drops of water and wait for it to sizzle and pop. When it starts to popping, it is hot enough to add the breaded fish.
- Combine the 1 cup of cornmeal and the 1 tablespoon of black pepper in a shallow pie plate. Dredge the prepared filets in the mixture on both sides of the fish and carefully put into the hot corn oil.
- Fry until nice and golden brown on both sides. Remove to a platter, sprinkle with salt and serve immediately.
- Cook's tip: I like to buy frozen filets for convenience, but fresh catfish, sole or talapia filets will work, too. I serve this with my Best Oven Baked Fries and Potato Wedges, and my Simple Romaine and Lettuce Salad, also on this site. Enjoy!
FRIED FISH SANDWICH
This fried fish sandwich doesn't stray far from the classic fast-food staple: breaded fish, a soft bun, a slice of cheese and tangy tartar sauce. The best part is you can put it together in just about the amount of time it would take to stand in line and order it at the counter. Capers, shallots and fresh dill make this tartar sauce feel a little fancy, but a splash of soy sauce adds the umami that takes it to a very familiar place. Flounder is an affordable choice for the recipe, but if you can't find it, substitute with sole or any mild flat fish.

Steps:
- Prepare the tartar sauce: In a medium bowl, whisk together mayonnaise, pickles and pickle brine, shallot, dill, capers and soy sauce. Season with salt to taste and set aside. (Makes 3/4 cup.)
- Prepare the fried fish: Heat oil in a large, straight-sided skillet over medium. Place flour, eggs and panko in 3 separate medium shallow bowls. Season flounder on both sides with salt and dredge in flour, dusting off excess, then transfer to egg wash, allow excess to drip off, then coat with panko.
- Working in batches, fry about 4 breaded fillets at a time until golden brown and cooked through, about 1 1/2 minutes per side. Transfer to a wire rack and season with salt. Repeat with remaining fish.
- Assemble the sandwiches: Spread tartar sauce on both sides of each bun. Place 1 piece of fried fish on each bottom bun, then add a slice of cheese on top and another piece of fish on the cheese. The residual heat from the fish will help melt the cheese. Sandwich together and serve immediately.
GRILLED FISH SANDWICHES FOR TWO
If you are in a hurry to get dinner on the table, these grilled fish sandwiches will be ready in less time than it takes to preheat the grill! To make things even quicker, I used a purchased remoulade sauce, but there are some great recipes for remoulade here on the site. We like simple toppings of lettuce and sliced tomatoes, but feel free to add your favorite sandwich toppings, if you prefer!

- Pat fillets dry with a paper towel, and brush each side with the seasoned butter mixture.
- Carefully oil grill grates and place fillets on the grill for 1 minute. Gently rotate the fish on the grate 60 to 90 degrees, to make grill marks, and continue grilling for 1 more minute.
