Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 7

8 ears corn (still in the husk)
2 red bell peppers, diced
2 fresh jalapenos, diced
1 cup heavy cream
1/2 cup milk
Salt and freshly ground black pepper
1 stick salted butter, cut into pieces

Steps:

  • Preheat the oven to 350 degrees F.
  • Remove the corn from the husks. In a large, deep bowl, slice off the kernels of corn with a sharp knife. Turn the knife to the dull side and scrape the cob all the way down to remove all the bits of kernel and creamy milk inside. (I do this inside the bowl because it goes everywhere if you cut it on a board.)
  • Add the red bell peppers, jalapenos, heavy cream, milk, salt to taste, a generous amount of pepper and butter and mix it well. Pour into a 9 by 13-inch baking dish. Bake until thoroughly warmed through, 30 to 45 minutes.

Corn Casserole - Minus Creamed Corn image

Love corn, but creamed not so much, all the others I can find here use creamed corn in the recipe, when I found this one on the internet it did not, so it's going on my list. The options with this dish are endless! You can choose to alter this in so many different ways and always get delicious results! I often add crispy, chopped bacon or red pepper flakes

Tips:

  • Choose the right corn. Fresh corn is best for this recipe, but you can also use frozen or canned corn. If using frozen corn, thaw it completely before using. If using canned corn, drain it and rinse it well.
  • Don't overcook the corn. The corn should be cooked until it is tender, but not mushy. Overcooked corn will lose its flavor and texture.
  • Use a good quality cream cheese. The cream cheese is one of the main ingredients in this recipe, so it's important to use a good quality brand. Look for a cream cheese that is smooth and spreadable.
  • Add some spice. If you like your food spicy, you can add some chopped jalapeños to the recipe. You can also add other spices, such as cayenne pepper or chili powder.
  • Serve it warm. This casserole is best served warm, right out of the oven. You can also make it ahead of time and reheat it before serving.

Conclusion:

Bonnie's Jalapeño Creamed Corn Casserole is a delicious and easy-to-make side dish that is perfect for any occasion. It's creamy, cheesy, and has just the right amount of spice. Plus, it's a great way to use up leftover corn. So next time you're looking for a quick and easy side dish, give this recipe a try. You won't be disappointed!
