2 tablespoons (1/4 stick) butter
3 large leeks (white and pale green parts only), halved lengthwise, sliced
2 teaspoons sugar
1/2 teaspoon dried thyme, crumbled
4 6- to 8-ounce orange roughy fillets
1/2 cup whipping cream
1/4 cup dry vermouth
Fresh chives or green onion tops cut into 1-inch lengths

Steps:

  • Melt butter in heavy large skillet over medium heat. Add leeks and sprinkle with sugar and thyme. Season with salt and pepper. Sauté 5 minutes. Reduce heat and cover and cook until very soft, stirring occasionally, about 10 minutes. Season fish with salt and pepper. Arrange atop leeks. Add cream and vermouth. Cover and cook until fish is opaque, about 8 minutes. Transfer fish to plates and keep warm.

6 medium leeks, white and light green parts only, halved lengthwise
1 organic navel or juice orange (seeds removed), sliced crosswise 1/4-inch thick, plus 1 cup orange juice (from about 3 oranges)
3/4 cup low-sodium chicken stock
Coarse salt
3 sprigs fresh thyme

Steps:

  • Preheat oven to 375 degrees. Heat a very large ovenproof skillet with a lid over medium high. Add oil and swirl to coat pan. Add leeks in as close to a single layer as possible. 4 large leeks (about 2 1/4 pounds), white and pale-green parts only, halved lengthwise, rinsed well and patted dry
1 teaspoon coarse salt
Freshly ground pepper
8 sprigs fresh thyme, plus more for garnish
1 large navel orange, thinly sliced crosswise, plus 1/4 cup fresh orange juice (2 oranges total)
4 skinless striped bass or sea bass fillets (about 4 ounces each)
6 pitted Kalamata olives, thinly sliced crosswise

Cooking times and amounts are very much approximated, as I am reconstructing this based on my memory of preparing it last night. Also, you may substitute any white fish in place of orange roughy.

4 (6 ounce) orange roughy fillets or 4 (6 ounce) other delicate white fish fillets
2 -3 tablespoons olive oil
2 -3 tablespoons paprika
2 -3 tablespoons fines herbes (or a combination of parsley, chervil, chives and tarragon)
2 tablespoons kosher salt
1 tablespoon lemon zest, more if you wish
2 -3 tablespoons lemon juice (or serve with lemon wedges)
fresh ground black pepper

Steps:

  • Preheat oven's broiler.
  • Place orange roughy fillets in a roasting pan and rub with kosher salt and oil.
  • You may also wish to spray bottom of pan with nonstick cooking spray, or use more oil, to keep fish from sticking.

16 medium leeks
2 cups homemade or low-sodium chicken stock
1 cup white wine
3 tablespoons unsalted butter
1/2 teaspoon kosher salt
Freshly ground white pepper

Steps:

  • Trim and rinse the leeks, discarding the roots and all but an inch or two of the green. Place the leeks in a skillet or casserole dish and add the stock, wine, butter, salt and pepper to taste. If necessary, add a little water so that the liquid comes about halfway up the leeks.
  • Place on top of the stove and bring to a boil. Lower to a simmer and cook, uncovered, 15 minutes. Turn the leeks and continue to simmer until they are tender and most of the liquid has evaporated, about 10 minutes more. (Add a little more water if they become dry.) Serve immediately.
