BRAN AND CHIA MUFFINS

Bran and Chia Muffins image

These moist, hearty muffins have great texture because of the slight crunch that the chia seeds contribute. They're not very sweet, and they crumble a little bit even thought they're moist; add a little more sweetener if you want more of a treat. I think they taste best a day after you bake them.

I love this recipe because it has spice. It is not overly sweet, it isn't bland either. The fat content isn't too high. I got the recipe from an old box of Kellogg's Bran Buds.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your muffins will be.
  • Don't overmix the batter: Overmixing can make the muffins tough. Mix just until the ingredients are combined.
  • Let the batter rest for a few minutes before baking: This will allow the bran to absorb some of the liquid and make the muffins lighter and fluffier.
  • Bake the muffins at a moderate temperature: This will help prevent them from drying out.
  • Store the muffins in an airtight container at room temperature for up to 3 days, or freeze them for up to 2 months.

Conclusion:

These bran and chia muffins are a delicious and healthy way to start your day. They're packed with fiber, protein, and healthy fats, and they're low in sugar.
