1 cup sourdough starter, you must have a starter available
3/4 cup water, warm about 110F
1 tablespoon sugar
1 tablespoon active dry yeast (not rapid rise yeast)
3 cups bread flour
3 tablespoons oil
2 teaspoons salt

Steps:

  • Put first 4 ingredients in bread machine and stir gently. (yes, this works...).
  • Let sit for about 10 minutes. Starter should start to bubble a little.
  • Add flour, then spread oil and salt evenly over the flour.
  • Select basic course or following custom settings if your bread maker has them:.
  • Custom settings for Zojirushi BB-CEC20: Preheat - 20 Minutes ( I start cycle after mixing first four ingredients then add remaining three ingredients after ten minutes), Knead - 20 minutes, Rise1 - 40 minutes, Rise2 - 40 minutes, Rise3 - OFF, Bake - 58 minutes Medium or Dark crust setting ( I use medium), Keep warm - OFF.

We served it with a homemade Garlic butter spread. My husband set the opened beer out the night before to go flat.Time is approximate.

I love the feta dill bread by Barb Gertz, but I wanted to convert it to a sourdough version. This is what I came up with. Time is approximate, as starters can be variable, and does not include time for sponge to develop. Try baking this as rolls for sandwiches.

1 cup bread flour
1/2 cup water
2 tablespoons sourdough starter
1/2 cup milk
2/3 cup crumbled feta
1 egg
1 tablespoon olive oil
2 1/2 cups bread flour
1/3 cup instant potato flakes
1 tablespoon sugar
1 1/2 teaspoons salt
1/2 cup chopped fresh dill, stems removed and lightly packed

Steps:

  • Prepare sponge: mix together the water, 1 cup flour and starter in a medium bowl. Cover and set in a warm space. Sponge will take 8 to 24 hours to develop. If you are not ready to bake, it will hold for a couple of days in the refrigerator.
  • Set bread machine to dough cycle. Place sponge and all remaining ingredients in pan in order recommended by the manufacturer. When the dough is completed, transfer it to a large oiled bowl, cover and let rise until doubled.
  • Remove and shape loaf as desired. Cover and let rise until doubled. The dough is slightly sticky, and I like to turn it out onto an oiled, not floured, board.
  • Bake in preheated 400 deg. oven for 30 minutes, or until it reaches an internal temperature of 200 to 205 degrees.
  • Note1: Starters vary considerably about how much time they need to double the loaf. If you are not confident about your starter, you can add 1 teaspoons instant yeast with the dry ingredients to ensure a prompt rise.
  • Note2: As with all bread recipes, check the texture of the bread early in the cycle and add additional flour or water, as needed. Feta is variable in the amount of moisture it contains.
  • Note3: Unless you know that your sourdough is strong, you may wish to shape immediately after the dough finishes kneading, and let it rise only once.

1/2 c water, warm instead of sourdough
1/2 c cottage cheese, creamed
1/4 c green chiles chopped
1 tsp grey poupon mustard
1 Tbsp butter, melted
2 c bread flour
1 Tbsp sugar instead of starter
1 tsp salt instead of starter
2 Tbsp parmesan cheese
1 1/2 Tbsp yeast (opt) or starter
1 1/2 Tbsp onion flakes, dehydrated

  • 1. Put ingredients into machine in this order. Use regular setting for white bread setting. If you use the 1qt starter you will do the bread by hand
  • 2. If using sourdough starter do not put ingredients marked instead of. If you do not use starter then put exactly in the order marked except sourdough starter. Enjoy............

  • Use a bread machine with a dough setting. The dough setting will knead the dough for the correct amount of time and at the correct speed.
  • Add the ingredients to the bread machine in the correct order. The order of the ingredients is important because it affects how the bread will rise and bake.
  • Use a digital kitchen scale to measure your ingredients. Measuring by volume is not accurate and can result in a bread that is too dense or too light.
  • Be patient. Sourdough bread takes longer to rise and bake than traditional yeast bread. However, the wait is worth it because sourdough bread has a delicious flavor and texture.
