Time 1h10m

Yield 2 loaves

Number Of Ingredients 14

3/4 cup brown sugar
1/3 cup shortening (or coconut oil)
1/3 cup butter
2 cups flour
1 pinch salt
2 1/4 cups grated coconut
1/4 cup raisins, chopped
1/4 cup dried cherries, chopped
1 tablespoon grated nutmeg
1 tablespoon almond extract
1 1/3 cups evaporated milk
3 tablespoons water
1 tablespoon butter (for pan)
2 tablespoons turbinado sugar

Steps:

  • Preheat the oven to 350*F and lightly grease a bread pan. The original recipe calls for 2 bread pans, but the bread doesn't rise at all so it bakes nicely in one pan.
  • In a mixer cream together the brown sugar, shortening and butter.
  • Add flour, salt, grated coconut, raisins, cherries, nutmeg and mix well.
  • Stir in almond extract, evaporated milk, and water, until a firm dough is formed. (You may need to add additional water.).
  • Split the dough evenly between the two pans, and use a knife to cut a diagonal criss-cross pattern on the top of each loaf. Sprinkle 1 tbsp turbinado sugar over the top of each loaf.
  • Bake for about 1 hour, until a skewer inserted into the center of the loaves comes out clean (Or a digital thermometer reads 190*F.) Cool completely in the pans before removing.

BARBADIAN PLAIN CAKE

Barbadian Plain Cake image

My grandmother, Gladys Payne Gittens, came here from Barbados about 1906. She read this to me over the phone when I was in law school in 1978. Thanks to my friend Elayne, the Soulful Yenta, to whom I gave a copy, I was able to find this on Mother's Day. It's a great simple pound cake, good with tea.

Tips:

  • Use fresh, high-quality ingredients. This will make a big difference in the taste of your bread.
  • Be patient. Bread takes time to rise and bake. Don't rush the process, or you'll end up with a dense, heavy loaf.
  • Pay attention to the temperature of your ingredients. Most bread recipes require warm water or milk. If the ingredients are too hot, they can kill the yeast and prevent the bread from rising.
  • Knead the dough properly. Kneading helps to develop the gluten in the flour, which gives bread its structure and elasticity.
  • Let the dough rise in a warm, draft-free place. This will help the yeast to multiply and produce gas, which will cause the dough to rise.
  • Bake the bread at the correct temperature. If the oven is too hot, the bread will brown too quickly and the inside will be undercooked. If the oven is too cool, the bread will not rise properly.
  • Let the bread cool completely before slicing it. This will help to prevent the bread from crumbling.

Conclusion:

Making Barbadian bread is a rewarding experience that can be enjoyed by people of all ages. With a little practice, you can create a delicious, flavorful loaf of bread that will be the hit of any meal. So what are you waiting for? Get started today!
