10 large eggs
3 tablespoons milk
¼ teaspoon salt
3 tablespoons vegetable oil

¼ teaspoon ground black pepper
10 large flour tortillas
1 ½ cups shredded Cheddar cheese

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels and crumble into bits. Keep skillet warm.
  • Whisk eggs, milk, and salt together in a bowl. Pour into the hot skillet. Cook and stir over medium-high heat until eggs are set, about 5 minutes. Transfer to a bowl.
  • Heat oil in same skillet over medium-high heat. Add frozen potatoes, garlic salt, and pepper. Fry until browned on the bottom, 4 to 5 minutes. Flip and cook until other side is browned, 4 to 5 minutes more. Let cool.

  • Wrap aluminum foil tightly around each burrito, covering it completely. Place in resealable plastic bags in a single layer. Remove as much air as possible from the bags before sealing. Store in the freezer until ready to reheat.
  • Reheat by removing the aluminum foil, placing the burrito on a microwave-safe plate, and topping it with a paper towel. Heat in the microwave until evenly warmed through, 1 to 2 minutes.

1 red bell pepper, chopped
1 yellow onion, chopped

Steps:

  • In a large skillet over medium heat, cook bacon (in batches if necessary) until crispy. Remove the bacon to a paper towel lined plate - leave to cool.
  • In the same skillet - using leftover bacon grease (drain some if necessary) add the potatoes and season with salt and pepper. Once lightly browned add in peppers and onion. Cook until potatoes have browned and the peppers and onions have softened. Remove from pan and place in bowl to cool.
  • In the same saucepan, cook sausage until browned and cooked through. Remove to a paper towel lined bowl.
  • Reduce heat to medium/low and pour beaten eggs into the skillet. Fold and stir eggs occasionally until cooked but still soft and moist. Remove from pan.
  • While cooked ingredients are cooling slightly, gather flour tortillas, shredded cheese and sliced green onions (optional) and set them out on your table/workspace.
  • To assemble the burritos, lay out a tortilla and start with a base of eggs followed by desired toppings and finish with cheese.
  • To wrap, fold in both sides and then fold the bottom up and over all the ingredients. Roll up tightly.
  • NOTE: If you find the tortillas are tearing, heat them up - a few at a time - for 20 seconds in the microwave before assembling.
  • Wrap up in parchment paper. Place the parchment-wrapped burritos in a 1 gallon freezer bag and place in the freezer to store for up to one month.
  • To Reheat: Remove the frozen burrito from the freezer. Unwrap from parchment paper and wrap the frozen burrito up in a damp paper towel. Place on a microwave safe plate and microwave for 3 minutes.

4 potatoes, shredded
1 small onion, finely chopped
1 clove garlic, minced
1 (8 ounce) container frozen Hatch, New Mexico green chile peppers
½ cup chicken broth
12 strips bacon
⅓ cup vegetable oil
1 tablespoon onion powder
salt and pepper to taste
6 (10 inch) flour tortillas
butter flavored cooking spray
12 extra large eggs, beaten
2 cups shredded Cheddar cheese

Steps:

  • Place the shredded potatoes in a bowl, cover with water, and set aside. Bring the onion, garlic, green chiles, and chicken broth to a boil in a saucepan over high heat. Reduce the heat to low, and simmer until the sauce thickens; turn off the heat.
  • Meanwhile, place the strips of bacon on paper towels on a microwave-safe plate, and cook on High until crisp, about 1 minute per strip; set aside.

  • Fold the left and right edges into the middle about 1-1/2 to 2 inches. Take the bottom edge closest to you with the stuffing and pick it up, pulling it OVER the filling, while keeping the sides in place until that edge now touches the tortilla about 7/8 of the way up to the top edge. Check to see that the sides are still tucked well. If they aren't slide them in a bit now that you have the filling covered. Finish by tucking the bottom flap that you pulled over the filling UNDER the filling a bit to seal it, then continue rolling the burrito up to the top edge, forming a tight cylinder. Let it rest seam-side down, and it will stay nice and tight. Repeat with remaining ingredients.

This recipe will make a large batch of the burrito fixins that you can freeze, or store in the refrigerator so that you can make great breakfast burritos whenever you please.

⅔ cup milk
½ teaspoon salt
2 tablespoons butter
1 pound bulk pork sausage

Years (and years) ago, while in high school, I worked at McDonald's when they first came out with these wonderful creations. After all this time, I still love to make and eat them. I think they have changed it over the years for the dollar menu but this is the ORIGINAL recipe. Sometimes when I don't have fresh tomatoes I substitute a little salsa or some drained Rotel tomatoes taste the best. If you go with the Rotel option, you can omit the diced green chilies that are called for in the recipe.

  • Mix together cooked and crumbled sausage, eggs, tomatoes, onions, chillies, salt and pepper.
  • In a large, buttered non-stick skillet, over medium-high heat, gently stir until eggs have reached desired doneness.
  • Fill a tortilla with 1/10 egg mixture and top with 2 slices of cheese laid end to end.
  • Garnish with salsa and sour cream.
  • Roll up and enjoy.

Yummy burritos that are so good that my husband was selling them for a buck apiece at corp school in the Navy. I was making them every night, and we bought a new couch with the money! These freeze really well; just defrost and eat. I also add fresh cooked mushrooms in these on occasion. I do find that these taste better when made ahead of time and eaten at a later time.

1 pound bulk pork sausage
½ small onion, chopped
2 teaspoons butter
12 eggs, beaten
1 (4 ounce) can diced green chilies, drained
¾ cup process cheese food (such as Velveeta®), divided
¾ cup salsa
1 (10 ounce) package burrito-size flour tortillas

Steps:

  • Place the pork sausage and onion into a skillet over medium heat, and cook until the sausage is browned, about 10 minutes. Break the meat apart into crumbles as it cooks. Drain the excess grease.
  • In a separate skillet over medium heat, melt the butter until the foam subsides, and cook and stir the beaten eggs with the chilies until softly scrambled but not wet, about 3 minutes. Transfer the scrambled eggs into a large bowl, and stir in the cooked sausage mixture.
  • Place a tortilla onto a microwave-safe plate, and cook in the microwave on High setting for 10 to 20 seconds. The tortilla should be warm and pliable. Spoon about 1/2 cup of the sausage and egg mixture in a line down the the tortilla, slightly off center. Top with about 1 tablespoon of shredded cheese, and 1 tablespoon of salsa. Fold 2 opposite ends of the tortilla over the filling. Press the 2 ends down so they stay folded. Carefully roll the shorter unfolded edge over the burrito, pushing the filling to the back of the roll as you go, to snugly enclose the filling. Keep the 2 ends folded as you roll. Wrap in foil if desired. Repeat with the rest of the tortillas.

1 pound breakfast sausage
10 eggs
1/4 cup half-and-half
1 teaspoon seasoned salt, such as Lawry's
Ground black pepper
12 flour tortillas
Breakfast Potatoes, recipe follows
Grated Monterey Jack cheese
Jarred jalapenos
Hot sauce
12 russet potatoes
Canola oil, for frying
Butter, for frying
1 large onion, cut into fine dice
1 green pepper, cut into fine dice
1 red pepper, cut into fine dice
1 yellow pepper, cut into fine dice
Salt and ground black pepper

Steps:

  • Begin by browning the breakfast sausage in a skillet over medium heat. Drain off the grease and reduce the heat to low.
  • Crack the eggs into a bowl. Add the half-and-half, seasoned salt and some pepper, and whisk to beat the eggs lightly.
  • With the heat still on low, pour the egg mixture over the sausage mixture. Now, with a spoon or spatula, very gently stir the mixture. Continue lightly cooking over low heat until the eggs are set. Now taste and adjust the seasoning, adding more seasoned salt or pepper if desired.
  • To assemble, warm the stack of tortillas on a paper towel in the microwave for about 30 seconds. Place a heaping spoonful of egg mixture onto the middle of a warm tortilla, and top with a spoonful of Breakfast Potatoes. Tuck in the sides and roll the tortilla until closed. Wrap in foil sheets and keep warm until ready to serve.
  • For cheesy and spicy variations, add grated Monterey Jack, jarred jalapenos, hot sauce or all three.
  • Preheat the oven to 375 degrees F.
  • Place the potatoes on a baking sheet and bake until fork tender, about 45 minutes.
  • Place the hot potatoes on a cutting board and dice them into 1-inch pieces.
  • Heat a skillet over medium-low to medium heat. Next, put a tablespoon of canola oil in the skillet. Add in some butter and the onions and saute until they start to turn brown. Next, throw in the cooked diced potatoes and the peppers. Salt and pepper the potatoes, then stir them around, slightly pressing/packing them in the skillet. Cook without stirring for 5 to 7 minutes. You want to make sure the pan is hot enough to crisp the potatoes. Add more butter to the pan as necessary for moisture.
  • After several minutes, use a spatula to flip the potatoes over and cook on the other side for another 5 to 7 minutes.

12 (8 inch) flour tortillas
6 -8 eggs, scrambled
2 teaspoons milk
2 large potatoes, skinned, boiled, cubed
1/2 lb chorizo sausage, skinned
2 lbs pork sausage
1 small green pepper, seeded and chopped
1/2 medium onion, diced
1 jalapeno, chopped (to taste)
1 -2 cup cheddar cheese, grated (to taste)
salt and pepper, to taste (optional)

hot sauce

Steps:

  • Boil the potatoes in a large pot of salted water. When done, drain and set aside.
  • Scramble the eggs with the milk to make them fluffy. Place in a bowl.
  • In the same pan used for the eggs, fry the pork sausage. Drain the fat. Set the pork aside.
  • In the same pan, fry the chorizo. Drain the fat. Add to the cooked pork sausage.
  • Together, saute the bell pepper, the onion and the jalapeno until the onions are transparent. Blend in the sausage mix. Take off the heat.
  • Heat tortillas in covered container in microwave for about 10 seconds. Heat long enough to just make them more pliable.
  • To each tortilla, add small amounts of egg, potato, sausage mixture and cheese. Fold like an envelope. Wrap individually in a square of tinfoil.
  • If eating right away, re-heat in a 350 degree oven for a few minutes.
  • If not eating promtly, freeze for later. Re-heat before eating.
  • Serve with sour cream, hot sauce and salsa.

One 10-ounce package fully cooked breakfast sausage links (I like Jimmy Dean's turkey sausage)
6 large eggs (or substitute 6 large egg whites)
1/4 cup chives, finely chopped
3 tablespoons whole milk or heavy cream
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons salted butter
4 ounces sharp Cheddar cheese, grated
1/2 cup Pineapple Avocado Salsa, recipe follows
4 lime wedges
Hot sauce, optional
2/3 cup grape tomatoes, chopped (10 to 12)
3/4 cup finely chopped pineapple
3 medium avocados, diced
1/2 finely chopped sweet onion, such as Vidalia
1/8 cup finely chopped fresh cilantro
1 tablespoon lime juice
1 teaspoon crushed red pepper flakes
1/4 teaspoon garlic salt

Steps:

  • Preheat the oven to 250 degrees F.
  • Place the tortillas on a baking sheet and heat in the oven until warmed through and softened, about 5 minutes.
