1 can (10-3/4 ounces) condensed broccoli cheese soup, undiluted
1 cup shredded cheddar cheese

  • Preheat oven to 350°. Prepare stuffing mix according to package directions, using only 1-1/2 cups water., In large bowl, combine chicken, broccoli and soup; transfer to a greased 11x7-in. baking dish. Top with stuffing; sprinkle with cheese. Bake, covered, 20 minutes. Uncover; bake until heated through, 10-15 minutes longer. Freeze option: Transfer individual portions of cooled casserole to freezer containers; freeze. To use, partially thaw in refrigerator overnight. Nonstick cooking spray or butter, for the baking dish
4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 medium head broccoli, cut into small florets
2 cups cooked white rice
One 10-ounce can condensed cream of chicken soup
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon lemon juice
10 ounces Cheddar, grated (about 2 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
  • Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
  • Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.
  • Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. 1 can cream of mushroom soup
8 ounces sour cream
salt and pepper
garlic powder
fresh broccoli florets
shredded cheddar cheese, to taste (enough to cover top of casserole)
grated parmesan cheese, to taste (enough to cover top of casserole)
Ritz cracker crumbs (our preference) or breadcrumbs, to taste (enough to cover top of casserole)

Steps:

  • Lay chicken breasts in casserole dish.
  • Place broccoli florets around the chicken breasts (around edge of dish).
  • Sprinkle with salt, pepper and garlic powder.
  • Mix soup and sour cream together.
  • Pour over chicken and broccoli.
  • Sprinkle shredded cheddar cheese over casserole.
  • Sprinkle Parmesan cheese on top.
  • Sprinkle Ritz cracker crumbs or bread crumbs on top.

It will be nice to have it on here now so I can just print it out!!! If you freeze this please double the sauce, for some reason it gets a bit dry in the freezer.

4 medium chicken breasts, cooked and shredded
4 cups cooked rice
2 medium stalk broccoli, lightly steamed
2 cups grated cheese, cheddar or 2 cups colby-monterey jack cheese
1 (10 1/2 ounce) can cream of chicken soup
1/2 cup mayonnaise, I have used miracle whip once with good results also
3/4 cup chicken broth
French-fried onions

Steps:

  • Preheat oven to 350 degrees.
  • Combine soup, mayo and broth in a large sauce pan, heat until warm.
  • Add cheese, stir until melted.
  • Add chicken, rice and broccoli, stir until well blended (if it seems like it needs more liquid add chicken broth or mayo a little at a time). Sometimes I just layer the ingredients: rice, chicken, brocolli, sauce, french fried onions, sprinkle with cheese. Same results.
