2 packages (10 ounces each) frozen cut broccoli
2 cups cooked rice
6 tablespoons butter, cubed
2 cups fresh bread crumbs (about 2-1/2 slices)
1 medium onion, chopped
3 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
3 cups milk
1-1/2 pounds fully cooked ham, cubed
Shredded cheddar or Swiss cheese

Steps:

  • Preheat oven to 350°. Cook broccoli according to package directions; drain. Spoon rice into a 13x9-in. baking pan. Place broccoli over rice. , Melt butter in a large skillet. Sprinkle 2 tablespoons of melted butter over the bread crumbs and set aside. In remaining butter, saute onion until soft. Add flour, salt and pepper, stirring constantly until blended; stir in milk. Bring to a boil; cook and stir until thickened, about 2 minutes. Add ham. , Pour over rice and broccoli. Sprinkle with crumbs. Bake until heated through, about 30 minutes. Sprinkle with cheese; let stand 5 minutes before serving.

2 c bread crumbs
1 onion, chopped
3 Tbsp flour
1 tsp salt
1/4 tsp pepper
3 c milk
1.5 lb ham, cooked and cubed
cheese, shredded

Steps:

  • 1. Cook broccoli according to package directions. Drain.
  • 2. Spoon rice into a 13x9\" baking pan.
  • 3. Place broccoli over rice.
  • 4. Melt butter in a large skillet.
  • 5. Sprinkle 2 tablespoons of melted butter over the bread crumbs and set aside.
  • 6. In remaining butter, saute onion unitil soft.
  • 7. Add flour, salt and pepper, stirring constantly until bubbly.
  • 8. Stir in milk and continue cooking until sauce thickens and bubbles.
  • 9. Cook and stir for one minute.
  • 10. Add ham and heat through.
  • 11. Pour over rice and broccoli.
  • 12. Sprinkle the crumbs over all.
  • 13. Bake at 350 for 30 minutes or until heated through.
