Categories     side-dish

Time 35m

Yield 6 servings

Number Of Ingredients 10

4 to 5 pounds broccoli
4 garlic cloves, peeled and thinly sliced
Good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
3 tablespoons pine nuts, toasted
1/3 cup freshly grated Parmesan cheese
2 tablespoons julienned fresh basil leaves (about 12 leaves)

Steps:

  • Preheat the oven to 425 degrees F.
  • Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper. Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
  • Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, the lemon zest, lemon juice, pine nuts, Parmesan, and basil. Serve hot.

BAKED ROMANESCO BROCCOLI WITH MOZZARELLA AND OLIVES

Baked Romanesco Broccoli With Mozzarella and Olives image

Sicilian cooks make a traditional cauliflower dish, using a pale-green variety that is baked with soft mild sheep's milk cheese and studded with meaty black olives. It can also be made with romanesco broccoli (confusingly called Roman cauliflower in English), the very bright chartreuse-colored cauliflower with pointy spiral florets you find at farmer's markets. But regular white cauliflower is fine, and will give delicious results, too.

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 11

Salt and pepper
2 or 3 medium heads romanesco broccoli (about 3 pounds)
3 tablespoons extra-virgin olive oil, plus more for baking dish
1 pound fresh mozzarella, sliced
1 cup grated pecorino or Parmesan (about 2 ounces)
1 dozen soft black oil-cured olives, or another type of black olive, pitted
1 teaspoon roughly chopped capers
4 roughly chopped anchovy fillets
4 garlic cloves, minced
1/2 teaspoon crushed red pepper, or to taste
Pinch of dried oregano

Steps:

Tips:

  • Choose fresh, vibrant broccoli Romanesco with tightly packed florets. Avoid any heads with signs of wilting or yellowing.
  • Trim the broccoli Romanesco by removing the tough outer leaves and cutting off the base. Cut the florets into bite-sized pieces.
  • Blanch the broccoli Romanesco in boiling water for 2-3 minutes, or until tender-crisp. Immediately transfer the florets to an ice bath to stop the cooking process and preserve their vibrant color.
  • Use high-quality Parmesan cheese for the best flavor. Freshly grated Parmesan is ideal, but you can also use a good quality pre-grated cheese.
  • For a smoother puree, use an immersion blender or a food processor fitted with a blade attachment. Blend the broccoli Romanesco, Parmesan cheese, olive oil, lemon juice, and salt and pepper to taste until smooth and creamy.
  • Serve the puree immediately as a dip, spread, or sauce. You can also use it as a base for soups, stews, or casseroles.

Conclusion:

Broccoli Romanesco and Parmesan puree is a versatile and flavorful dish that can be enjoyed in many different ways. With its vibrant green color and nutty, slightly sweet flavor, it's a great addition to any meal.
