1 tablespoon cornstarch
1/2 cup cold water
1/2 cup honey
1/4 cup white wine or chicken broth
1/4 cup lemon juice
1 teaspoon garlic salt
1/2 teaspoon grated lemon zest
1 tablespoon minced fresh tarragon

Steps:

  • Place fish on a lightly greased 15x10x1-in. baking pan. Broil 4 in. from the heat for 8-10 minutes or until fish flakes easily with a fork., Meanwhile, in a small saucepan, whisk cornstarch and water until smooth. Stir in the honey, wine, lemon juice, garlic salt and lemon zest. Bring to a boil. Cook and stir for 3-5 minutes or until thickened. Remove from the heat; stir in tarragon. Serve with fish.

2 whole fish such as Orata, Branzino, scaled and gutted
Olive oil
Kosher salt and freshly ground pepper
1 large orange cut into thin slices
1 bunch tarragon
1 bunch parsley
Sherry Vinegar-Tarragon Vinaigrette, recipe follows
1/4 cup aged sherry vinegar
1 small shallot, chopped
2 teaspoons Dijon mustard
3 tablespoons chopped fresh tarragon
Salt and freshly ground pepper
1/2 cup Spanish olive oil

Steps:

  • Heat grill to medium-high heat. Brush the fish on both sides with olive oil and season with salt and pepper. Fill the cavities of both fish with orange slices, tarragon and parsley and place on the grill. Grill the fish for 6 to 7 minutes on each side. Remove from the grill, place on a platter and drizzle immediately with the Sherry Vinegar-Tarragon Vinaigrette.

5 pounds live crawfish (Select or True Select)
Kosher salt
3 sticks unsalted butter, slightly softened
1/4 cup hot sauce, such as Tabasco
1/4 cup chopped fresh tarragon
1/4 teaspoon cayenne powder
Freshly ground black pepper

Steps:

  • Add the crawfish to a large pot of salted boiling water. Cook for about 30 seconds. Shock the crawfish in a bowl filled with ice water.
  • Cut through the shell on the belly side the entire length of the crawfish. This will help the meat cook evenly. Remove the vein along the body as well as the sack behind the eyes. Rinse thoroughly.
  • Combine the butter, hot sauce, tarragon and cayenne in a food processor. Process until smooth. Season with salt and pepper.
  • Prepare a charcoal grill for direct grilling. Place the crawfish in a grill basket and grill until the shell turns bright red and the meat is opaque, about 5 minutes, shaking the grill basket occasionally.
  • Meanwhile, melt the spicy tarragon butter in a saucepan or skillet. Remove the crawfish to a large platter or shallow bowl, season with salt and pepper and drizzle with the melted butter. Serve immediately.

3/4 lb white fish fillet (cod, sole, orange roughly, talapia, mahi mahi)
3 tablespoons butter, divided
1 1/2 tablespoons fresh lemon juice
1 tablespoon chopped fresh tarragon

Steps:

  • Salt and pepper tops of fish.
  • Melt 1 tablespoon butter in a skillet.
  • Add fish, top side down and cook over high heat until brown on the bottom, 3 to 5 minutes.
  • Turn and cook until fish flakes, about 3 minutes. Timing depends on thickness of the fish.
  • Remove to a platter.
  • Over low heat, add remaining 2 tablespoons butter to skillet.
