½ cup vegetable oil
½ cup soy sauce
2 tablespoons water
2 tablespoons brown sugar
1 tablespoon chopped fresh ginger
2 cloves garlic, minced
¼ teaspoon ground black pepper
2 (2.5 pound) flank steak

Steps:

  • Combine oil, soy sauce, water, brown sugar, ginger, garlic, and pepper in a small bowl. Mix until combined.
  • Cut shallow slashes in a crosshatch pattern on both sides of the steak, being careful not to cut all the way through.
  • Place steak in a low, flat dish and pour marinade on top, covering meat completely. Cover and refrigerate at least 4 hours, or overnight, turning steak over once.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Remove steak from the marinade and place on a baking pan. Reserve marinade.
  • Broil, brushing occasionally with marinade, until browned and heated through, about 5 minutes per side. Remove steak to a platter and cover loosely with foil. Let rest for at least 5 minutes. Slice into 1- to 2-inch strips across the grain.

1/4 cup plus 2 tablespoons extra-virgin olive oil
1/4 cup chopped fresh parsley
2 tablespoons red wine vinegar
1 clove garlic, minced
Pinch of crushed red pepper flakes

1 flank steak, 1 1/2- to 2-pounds

Steps:

  • Position an oven rack 5 to 6 inches from the broiler unit, and preheat the broiler. Line a broiler pan or baking sheet with foil, and set the broiler insert on top of the broiler pan if using. Place the pan on the oven rack, and preheat until hot, about 5 minutes.
  • Meanwhile, mix together 1/4 cup of the oil, parsley, vinegar, garlic, pepper flakes, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Cover the herb oil, and set aside until ready to serve.
  • Stir together the remaining 2 tablespoons oil, 2 teaspoons salt and 1 teaspoon pepper in a small bowl. Rub the mixture on both sides of the steak.
  • Carefully remove the broiler pan from the oven, put the steak in the center and broil (without turning) until nicely browned and firm, with some give when pressed in the thickest part, 6 to 8 minutes for medium-rare. Let the steak rest for 10 minutes. Slice thinly against the grain, and serve with the herb oil.

1 tablespoon freshly squeezed lemon juice
4 thick slices rustic bread, toasted

1 white onion, chopped
1 garlic clove, minced
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon rosemary

Steps:

  • Combine all ingrediants with flank steak in shallow container or zip lock and refrigerate for 4 hours or more.

1 garlic clove, sliced thinly
1 cup olive oil
1/2 red wine vinegar
1 teaspoon salt
1/4 teaspoon pepper

1 drop Tabasco sauce

Steps:

  • Remove excess fat from steak and then score on both sides.
  • Place all other ingredients in a shallow pan (or ziplock bag) and mix well.

1 lb lean flank steak, trimmed of all visible fat
3 tablespoons red wine vinegar
1 1/2 tablespoons soy sauce
2 teaspoons dry mustard
1 teaspoon chili powder
2 teaspoons honey
1/4 teaspoon pepper
1 garlic clove, crushed
1/4 cup plain nonfat yogurt
2 tablespoons Dijon mustard
vegetable oil cooking spray
1 teaspoon parmesan cheese, grated
1/2 garlic clove, smashed

Steps:

  • Score steak diagonally across the grain at 1" intervals on both sides (in a diamond pattern), and place in a heavy duty zip-top plastic bag.
  • Combine vinegar with next 6 ingredients, and pour evenly over meat.
  • Seal bag and shake until steak is well coated, and marinate in refrigerator overnight, turning bag occasionally.
  • In a small bowl, combine yogurt with mustard, cheese and garlic, cover and chill 30 minutes.
  • Remove steak from marinade, reserving 2 tbsp marinade.
  • Coat a broiler pan with cooking spray, and place steak on the rack.
  • Broil 5 1/2" from heat, with door partially open, 5 minutes on each side or to desired doneness, basting frequently with marinade.

2 flank steaks
1 cup chili sauce (I have used salsa for this in a pinch)
1/2 cup red wine vinegar
1 cup red dinner wine
2 Tb. Worchestershire sauce
1 Tb. Instant minced onion
1/4 tsp garlic powder
2 tsp prepared mustard
2 tsp salt
1/4 cup salad oil
1 10- oz. can condensed consommé soup
3 Tb. Cornstarch ( optional)

Steps:

  • Place steaks in flat shallow dish. Make marinade by combining the remaining ingredients except consommé and cornstarch. Mix well and pour over meat. Pierce meat with meat fork to let marinade enter steak. I usually put the meat and marinade in a gallon sized plastic bag at this point and place in refrigerator. Cover or place in bag and let stand two hours or more ( flip bag once in a while). Drain steaks saving marinade. Broil steaks 3" from heat, over charcoal or in oven broiler. For medium rare, allow 5-7 minutes on each side. While steak is cooking, heat marinade to boiling. Add consommé soup and thicken with 3tbs. of cornstarch dissolved in 3Tbs of COLD water if desired. When steaks are done, transfer to cutting board and slice diagonally across the grain. Serve with sauce.
