Time 4h

Yield 10 to 12 servings

Number Of Ingredients 12

1 1/2 sticks (12 tablespoons) unsalted butter, plus more for greasing the loaf pan
1 3/4 cups all-purpose flour (see Cook's Note)
1/4 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon fine salt
1/2 cup packed light brown sugar
2 large eggs
1 teaspoon pure vanilla extract
4 very ripe bananas, mashed
1/4 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-5-inch loaf pan.
  • Heat the butter over medium-low heat in a small saucepan until the milk solids are deep golden brown and the butter smells toasted, 15 to 20 minutes.
  • Whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon and salt in a medium bowl.
  • Stir the brown butter so that any milk solids that have fallen to the bottom are distributed equally throughout the butter. Reserve 4 tablespoons of the brown butter for the glaze. Whisk together the remaining brown butter, brown sugar, eggs and vanilla in a medium bowl, then fold in the mashed bananas.
  • Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps). Transfer the batter to the prepared loaf pan, and bake until the bread is golden brown and a toothpick inserted in the center comes out clean, 1 hour to 1 hour 10 minutes. Run a knife around the edges, and let cool completely in the pan on a rack.
  • Once the bread has cooled, heat the reserved brown butter in a microwave-safe bowl in the microwave until melted, then whisk in the confectioners' sugar. Let the glaze sit at room temperature until it stiffens up a little but is still pourable, about 5 minutes. Pour and spread the brown butter over the bread. Let set. The bread can be stored at room temperature in an airtight container for up to 3 days.

Time 1h20m

Yield 1 loaf

Number Of Ingredients 11

6 tablespoons unsalted butter
2 cups unbleached all-purpose flour
3/4 cup sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
2 large eggs, lightly beaten
1 1/2 cups mashed bananas (from about 3 large ripe bananas)
1/4 cup whole-milk plain yogurt (can also use regular whole milk)
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350. Grease a loaf pan (9 X 5 inches) with cooking spray or butter.
  • Place butter in a small skillet or sauce pan and melt it on medium-low heat. Swirl the pan around as the butter begins to foam. The foam will subsides and the butter will begin to brown. When it begins to smell nutty and the butter turns a shade of golden brown, remove from heat immediately. Don't let it burn; let cool.
  • In a large bowl, whisk the flour, sugar, baking soda, salt, ginger and cinnamon.
  • Place slightly beaten eggs in a seperate bowl. Add the mashed bananas, yogurt (or milk), the cooled brown butter and vanilla and stir to mix well.
  • Pour the banana mixture into the flour mixture and stir gently with a rubber spatula until just combined; do not over mix. Scrape batter into the prepared pan, smooth the top; bake preheated oven for 50 - 60 minutes, or until a tester comes out clean. (Depending on many factors, this may take longer, but not so long as to dry out cake.).
  • Cool the loaf in the pan on a rack for 5 minutes then tip out on to the rack and let cool completely before slicing.

BROWN BUTTER BANANA BREAD

Brown Butter Banana Bread image

From Fat Girl Trapped in a Skinny Body... Browning brings out the richness of the butter. Go ahead and try a little spoonful from the pan, see, now you know what I'm talking about. The nutty, salty, sweet, milky flavors are all enhance. The brown butter and the brown sugar really give the loaf a depth of flavor that can't be achieved form just using regular butter or white sugar. It is worth the effort of using 1 extra pan to make the brown butter, it is TOTALLY worth it! The 'crust' has a perfect slight crunch, and the inside, wow, I literally can't stop eating it. It isn't overly sweet either. It is sweet yes, but not like a cake. But it is buttery like a cake, PERFECT!

Time 1h20m

Yield 1 loaf, 10 serving(s)

Number Of Ingredients 9

8 tablespoons butter
2 cups flour (I actually used 10 ounces)
3/4 cup brown sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
4 bananas (equal to about 13 ounces)
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees and grease an 8 inch loaf pan.
  • In a medium saucepan over high melt the butter. Once it is melted lower the heat to medium and swirl the butter around the pan instead of stirring it. It will take about 5 minutes for it to brown. Occasionally swirl it. You will notice when it turns brown because it literally, turns brown. Remove the pan from the heat and allow to cool while getting everything else ready.
  • In a large bowl sift the flour, sugar, baking powder, baking soda and salt.
  • In another bowl whisk the eggs then add the mashed bananas, vanilla and the semi-cooled butter.
  • Add the liquid to the dry mixture. Mix just until incorporated, don't over mix. I only used maybe less then 15-20 stirs. Pour the batter into the greased loaf pan.
  • Bake at 350 degrees for 60-70 minutes, until it is browned on top and a fork inserted comes out clean. Cool for at least 15 minute sin the pan before cutting and serving.
  • Cut loaf into 10 slices and serve, warm, with extra butter?!

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be.
  • Brown the butter: Browning the butter adds a nutty, caramelized flavor to the banana bread.
  • Don't overmix the batter: Overmixing the batter will make the banana bread tough. Mix just until the ingredients are combined.
  • Bake the banana bread at a low temperature: Baking the banana bread at a low temperature will help it to rise evenly and prevent it from drying out.

Conclusion:

Browned butter banana bread is a delicious and easy-to-make treat that is perfect for any occasion. With its moist, tender crumb and sweet, caramelized flavor, this banana bread is sure to be a hit with everyone who tries it. So next time you have some ripe bananas on hand, be sure to give this recipe a try.
