Posted for ZWT6 - Great Britain Region. The history of these little candies states that in Victorian times Judy Bartlett had a sweetshop in Westgate, Bradford. Her name lives on today through "Judy Bartletts mint humbugs", a mint humbug with a chewy center. Servings are a TOTAL GUESS.

1 lb brown sugar (450g)
1/2 cup water (150ml or 1/4 pint)
3 drops peppermint extract (aka essence)

Steps:

  • Place the brown sugar into a heavy bottomed saucepan.
  • Heat gently until the sugar has completely dissolved, but do not stir.
  • Boil to a temperature of 310°F (154°C) - measure with a candy thermometer for accuracy.
  • When the water has evaporated add a few drops of peppermint essence.
  • Pour mixture on a slab, using a knife to prevent it running too thin.
  • Cut into strips, and cut with sharp buttered scissors. If you pull it a bit before cutting with scissors it will turn a lovely amber color.
  • Wrap in cellophane and store in an airtight container.

I was looking for something easy to throw together and grabbed items from my kitchen and just went to work. This is an easy recipe and you can easily omit ingredients or substitute others. It's really good and has quite a kick to it.

1 1/2 lbs ground beef
2 tablespoons Worcestershire sauce
1 pinch thyme
2 (15 ounce) cans pinto beans (preferably with jalapenos)
1 (28 ounce) can crushed tomatoes
1 (16 ounce) jar salsa
1 (10 ounce) can diced tomatoes or 1 (10 ounce) can green chilies
1 pinch cayenne pepper
1 tablespoon packed brown sugar
1/2 teaspoon Tabasco sauce
1 1/2 tablespoons cumin
1 teaspoon garlic salt
1 (10 1/2 ounce) can beef consomme (with gelatin)
1/2 teaspoon oregano leaves
1/2 teaspoon liquid smoke
1 tablespoon canola oil or 1 tablespoon peanut oil
3 tablespoons chopped onions
1 tablespoon browning sauce or 1 tablespoon seasoning

Steps:

  • Break beef into big chunks.
  • Heat oil in pot, put in beef.
  • Brown the beef, breaking it up continuously.
  • Season with browning/seasoning sauce.
  • Add onions.
  • Then add tomatoes and salsa, bring to a boil.
  • Add pinto beans, again bringing it to a boil.
  • Add beef consomme, bringing it to a boil again.
  • Add worcestershire sauce, liquid smoke, tobasco sauce.
  • Then add dry ingredients left: oregano, thyme, garlic salt, cayenne pepper, cumin and brown sugar.
  • Bring to a boil one more time, then put heat on low, cover, and let simmer until ready to serve. (At this point the chili is done, simmering it keeps it ready to serve).
  • (Note: Bringing it to a boil, basically just wait until bubbles arise from sides of pan).
