2 teaspoons extra-virgin olive oil
1 small onion, finely chopped
4 cloves garlic, minced
2 cups chopped plum tomatoes, with juices
6 oil-packed sun-dried tomatoes, drained and finely chopped
½ teaspoon salt
½ teaspoon freshly ground pepper
2 tablespoons chopped fresh basil
1 pound 93%-lean ground turkey
¼ cup finely chopped scallions
2 teaspoons minced garlic
2 teaspoons Worcestershire sauce
1 teaspoon freshly grated lemon zest
½ teaspoon dried oregano
½ teaspoon freshly ground pepper
¼ teaspoon salt
½ cup shredded part-skim mozzarella cheese, divided
2 tablespoons finely chopped fresh basil
2 teaspoons extra-virgin olive oil
4 4-inch-square slices foccacia bread, (about 2 ounces each), toasted

Steps:

  • To prepare marinara: Heat 2 teaspoons oil in a medium saucepan over medium heat. Add onion and garlic, cover and cook, stirring frequently, until translucent, 5 to 7 minutes. Stir in fresh tomatoes and any juices, sun-dried tomatoes, 1/2 teaspoon salt and 1/2 teaspoon pepper. Bring to a simmer and cook, stirring occasionally, until the tomatoes have broken down, 8 to 10 minutes. Stir in basil and remove from the heat. Transfer to a food processor and pulse to form a coarse-textured sauce. Return to the pan and set aside.
  • To prepare burgers: Place turkey, scallions, garlic, Worcestershire sauce, lemon zest, oregano, 1/2 teaspoon pepper and 1/4 teaspoon salt in a large bowl. Gently combine, without overmixing, until evenly incorporated. Form into 8 thin patties about 4 inches wide and 3/8 inch thick.
  • Combine 1/4 cup cheese and basil and place an equal amount in the center of 4 patties. Cover with the remaining patties and crimp the edges closed.
  • Heat 2 teaspoons oil in a large nonstick skillet over medium heat (see Grilling Variation). Add burgers and cook, turning once, until an instant-read thermometer inserted in the center registers 165 degrees F, 8 to 10 minutes total.
  • Warm the marinara on the stove. To assemble the burgers, spread 3 tablespoons of marinara on each toasted focaccia, top with a burger, about 3 more tablespoons of marinara and 1 tablespoon of the remaining cheese.
  • Grilling Variation: To grill the turkey burgers, preheat a grill to medium-high. Oil the grill rack (see Tip). Grill the patties, turning once, until an instant-read thermometer inserted in the center registers 165 degrees F, 8 to 10 minutes total.

1 lb lean ground beef
3 teaspoons montreal steak spice
1 egg
1/4 cup oatmeal
6 kaiser rolls or 6 focaccia bread
1 tablespoon mayonnaise
1 tablespoon basil pesto
mozzarella cheese
6 -12 tablespoons tomato bruschetta topping (I use Red Carpet Bruschetta)

Steps:

  • Combine ground beef,steak spice( I use Montreal steak spice), egg and oatmeal. Form into patties. Barbeque patties over medium heat on barbeque turning frequently for approximately 5 minutes per side.
  • In the mean time prepare Red carpet brushetta using recipe #222776. This is a key ingredient for the recipe!
  • Prepare buns or foccacia (foccacia is the most tasty for these burgers).
  • On one half of the bun spread the mayonnaise and top with mozzarella cheese. Heat bun until cheese is melted. Place the cooked burger patty atop the side of the bun with the mozzarella cheese on it. Top the burger patty with basil pesto followed by Red carpet Bruschetta #222776 approximately 1-2 tbsp to taste.
  • Now you are ready to enjoy!

1/4 cup cherry tomatoes, sliced in half
4 basil leaves, thinly sliced
1 teaspoon minced garlic

2 or 3 baguette slices
Grapeseed oil

1 tablespoon aged balsamic vinegar

Steps:

  • Add the tomatoes, basil, garlic, olive oil and some salt and pepper to a bowl. Toss and let marinate for 5 minutes.
  • Toast the baguette slices in a hot pan with grapeseed oil. Remove to a plate and season with salt and pepper.

1 1/3 pounds ground chuck
1/4 cup grated red onion (grated on a box grater)
1/4 cup chopped fresh oregano
1 1/2 teaspoons kosher salt
Freshly ground black pepper
1/4 cup olive oil
2 ounces shaved Parmesan
2 loaves frozen garlic bread (or 8 pieces frozen Texas toast garlic bread), cooked as directed, cut into 8 bun-size circles (see Cook's Note)
4 Roma tomatoes, seeded and chopped
1/2 cup torn fresh basil
Balsamic syrup, to taste

Steps:

  • In a large bowl, add the ground chuck, onion and oregano. Sprinkle the salt evenly over the bowl and add a hefty amount of black pepper. Gently mix, divide into 4 balls and allow to dry-marinate at room temperature for 1 hour.
  • Preheat a gas grill or large griddle on high.
  • Divide each ball in half to create 8 smaller balls, then press each into a thin flat patty between 1/4 and 1/8 inch thick. The easiest way to do this is between 2 pieces of parchment paper, using a glass or rolling pin. Brush the top side of each patty with the olive oil. Add the patties oiled-side down to the grill and cook until the edges are golden, about 5 minutes. Top half of the patties with the Parmesan and cover each with another patty, creating 4 sandwiched patties. Turn off the heat and cover with aluminum foil or an upside-down metal bowl to tent for just 2 minutes.
  • Place the patties on a garlic bread round (crust-side down) and top each with some tomatoes and basil and a drizzle of balsamic syrup. Top with another garlic bread round (crust-side up) and serve.

3 tablespoons reduced-sugar apricot preserves
1 tablespoon prepared horseradish
2 thin slices prosciutto or deli ham, chopped
1 pound lean ground beef (90% lean)
3/4 teaspoon salt-free lemon-pepper seasoning
8 slices French bread (1/2 inch thick)
1 cup fresh arugula or baby spinach
2 ounces Brie cheese, cut into eight thin slices
1/4 cup julienned roasted sweet red peppers

  • In a small bowl, combine the mustard, preserves and horseradish. In a small skillet coated with cooking spray, cook and stir prosciutto over medium heat until lightly browned.
