My husband loves Taco Mac. We moved to Denver recently and no Taco Mac.This is my attempt to duplicate them for him. He loved them so I guess they are close.

1/4 cup butter
1 cup Durkee's sauce
1 garlic clove, minced
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon sugar (optional)
2 -3 lbs chicken wings
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
vegetable oil, for frying

Steps:

  • Combine hot sauce, butter, Worcestershire sauce, garlic and sugar; mix well in a pot and warm the sauce until butter is melted. Keep warm until ready to use.
  • If the wings are frozen, be sure to defrost and dry them.
  • If they have not been clipped yet, clip the tips off, and separate at the joint.
  • Wash them well in cool water. Season with salt, paprika and cayenne.
  • Put on a paper towel covered rack/tray in the refrigerator overnight to air dry. ( This is critical if you want to match the texture of Taco Macs, especially if they were frozen).
  • Oil should be about 375 degrees. Deep fry the wings in batches until just golden, about 10 to 15 minutes or until some parts of the wings begin to turn dark brown.
  • Remove the wings from the oil to a paper towel covered pain to drain and put in a warm oven (200 degrees) while cooking the remaining wings. But don't let them sit too long, because you want to serve the wings hot.
  • Put the wings into a large bowl with lid. Add the hot sauce. Put on the lid, then shake making sure to coat all the wings evenly. Serve any left over sauce on the side.
  • Serve with Bleu cheese dressing and celery sticks. Don't forget the beer!

1/4 teaspoon Worcestershire sauce
1/2 cup low-carb blue cheese salad dressing (optional) or 1/2 cup low carb ranch salad dressing (optional)
4 -5 celery ribs, cut into sticks (optional)

Steps:

4 tablespoons butter

50 chicken, drumetts (organic) or 25 whole chickens, wings cut into two pieces (discard tips)
2 cups hot sauce (commercial or homemade)
1 cup butter (organic)
2 teaspoons cayenne pepper
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1/2 cup baking powder
olive oil flavored cooking spray (Pam)

Steps:

  • Preheat oven 250°F Line baking sheet with foil. Spray baking rack with Olive oil Pam and place in pan.
  • Spray the chicken pieces with Olive oil Pam, then salt and pepper to taste. Season with garlic powder.
  • In a large zip lock bag, place 1/4 cup of the baking powder and 1 tsp of cayenne pepper. Add half the chicken and toss until coated. Place on the cooking rack. Repeat with other half of chicken and remaining powder and cayenne.
  • Bake coated chicken wings for 20 min at 250 F, then increase heat to 425 F and bake for 20 more minutes. Turn pieces over and bake for another 20 min or until golden brown and chicken is thoroughly cooked.
  • If making your own buffalo sauce, heat prepared hot sauce (commercial or homemade) and butter in a sauce pan until well blended. Pour sauce in a large bowl. If using a commercially prepared buffalo sauce just pour it in a large bowl. I highly recommend my habanero mango sauce (also paleo compliant), but Franks Red Hot Buffalo Sauce is quite good and not terrible from a paleo point of view.
  • Toss all the cooked chicken until evenly coated. Transfer to a platter and serve with your favorite sides.

3 lb chicken wings
1/2 c soy sauce
1/2 c italian dressing
1/4 c butter
1 tsp soy sauce
1/4 c hot pepper sauce...preferably frank's red hot to taste

Steps:

  • 1. Combine 1/2 cup soy sauce, Italian dressing, and chicken wings in a large, zip-top bag. Close bag and refrigerate 4 hours to overnight. Preheat an outdoor grill for medium heat. In a small saucepan, melt the butter. Stir in the 1 teaspoon soy sauce and the hot pepper sauce. Turn off heat and reserve. Remove the chicken wings from the marinade and pat dry. Cook the wings on the preheated grill, turning occasionally, until the chicken is well browned and no longer pink, 25 to 30 minutes. Place grilled wings in a large bowl. Pour butter sauce over wings; toss to mix well.
  • 2. You can also do these in the oven. Bake at 400 for 40 minutes.
