Number Of Ingredients 6

1 tablespoon plus 2 teaspoons roasted, mashed garlic (about 12 cloves)
1 tablespoon plus 2 teaspoons picked and finely chopped thyme
2 1/4 teaspoons fresh squeezed lemon juice
1 quart plain yogurt
1/2 teaspoon Worcestershire sauce
Salt and pepper

Steps:

  • (For an alternative replace the lemon, garlic and thyme with 1 1/2 teaspoons cumin and 2 tablespoons chopped parsley)
  • In a mixing bowl, add garlic, thyme, and lemon juice to the yogurt and mix well. Place mixture in cheesecloth, set over a colander, set over a bowl and place in refrigerator for 12 hours.
  • Discard liquid and place remaining yogurt in bowl. Add salt and pepper, to taste.

For toasts
1 baguette (about 22 inches)
1/2 stick (1/4 cup) unsalted butter
For spread
two 19-ounce cans white beans such as cannellini
1 cup packed fresh flat-leafed parsley leaves
2 large garlic cloves
1 teaspoon salt
2 teaspoons minced fresh thyme leaves
2 teaspoons drained capers
3 tablespoons fresh lemon juice
6 tablespoons extra-virgin olive oil

Steps:

  • Make toasts:
  • Preheat oven to 375°F.
  • Cut baguette crosswise into 1/4-inch-thick slices. In a saucepan melt butter with salt to taste over moderate heat and brush butter on one side of each slice. Arrange baguette slices, buttered sides up, on 2 large baking sheets and toast in upper and middle thirds of oven until golden, about 12 minutes. (Toasts may be made 2 days ahead and kept in an airtight container.)
  • Make spread:
  • Drain beans in a colander. Gently rinse beans and drain well. Mince parsley. In a food processor blend together all spread ingredients except oil until smooth. With motor running, add oil in a slow stream, blending until incorporated, and season spread with salt and pepper. (Spread may be made 1 day ahead and chilled, covered. Bring spread to room temperature before serving.)

This spread or dip is a bit different than others I've tried. The flavor reminds me of herbed olive oil that you dip bread into. Fresh herbs are a must, but any white bean can be used in place of the cannellini beans. I used purple basil, which gave the spread a nice color. It is good any way you'd normally use hummus or most any dip, but I think it is especially good on crostini or crackers, or as a sandwich spread. This is adapted from a recipe from Kraft.

1 (15 ounce) can white kidney beans, rinsed and drained (cannellini)
3 cloves garlic
1 1/2 tablespoons lime juice
1 tablespoon olive oil
