1 large onion, halved
1 head garlic, sliced in half crosswise to expose the cloves
1/4 cup Old Bay seasoning
1 tablespoon whole black peppercorns
1 teaspoon fine sea salt, plus more as needed
1/2 teaspoon cayenne
6 tablespoons unsalted butter (3/4 stick)
1 lemon, halved
1 tablespoon minced shallot (optional)
1 tablespoon Tabasco or Crystal hot sauce, plus more as needed
2 pounds large shell-on shrimp
Crusty bread, for serving

Steps:

  • Bring 6 cups water with the onion, garlic, Old Bay, peppercorns, salt and cayenne to a boil in a large pot. Cover and simmer for 10 minutes to allow the flavors to develop.

1 1/2 pounds medium shrimp, peeled and deveined
Kosher salt and freshly ground black pepper, to taste
5 cloves garlic, minced
1/4 cup chicken stock
Juice of 1 lemon, or more, to taste
2 tablespoons chopped fresh parsley leaves

Steps:

  • Melt 2 tablespoons butter in a large skillet over medium high heat. Add shrimp, salt and pepper, to taste. Cook, stirring occasionally, until pink, about 2-3 minutes; set aside. Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1 minute. Stir in chicken stock and lemon juice. 1/4 cup white vinegar
1/2 lemon, thinly sliced
2 cloves garlic, smashed
