Time 18m

Yield 4-6 serving(s)

Number Of Ingredients 9

3 large onions, preferably sweet onions
3 -4 cups buttermilk
1 cup all-purpose flour
1 cup cornmeal
2 teaspoons salt
2 teaspoons onion powder
2 teaspoons chili powder
1 teaspoon sugar (if not using very sweet onions)
oil, preferably peanut oil (for deep frying)

Steps:

  • Cut the onions in 1/4" slices. In a glass dish, soak the onions in the buttermilk for 30 to 60 minutes.
  • In a brown paper sack, combine the flour, cornmeal, salt, onion powder, chili powder, and if needed, sugar. Drain the onions lightly and dredge them in the seasoned flour.
  • Pour at least 4" of oil into a heavy saucepan. Heat the oil to 375°. Fry the onions, in batches, for 2 to 3 minutes, or until golden. For the crispiest results, drain on paper towels and spread on a serving plattter rather than piling them into a basket, where they could become soggy. Serve immediately.

Categories     appetizer

Number Of Ingredients 13

1 cup all purpose flour
3 cups buttermilk
Pinch cayenne
Salt
4 large Vidalia onions, peeled and cut crosswise into 3/4-inch slices
4 cups peanut oil
4 cups all purpose flour seasoned with salt and pepper
2 plum tomatoes, grilled, seeds and skin removed and coarsely chopped
2 cups good quality mayonnaise
3 cloves garlic, coarsely chopped
2 tablespoons fresh lime juice
Pinch of cayenne
Salt

Steps:

  • Combine buttermilk, flour, cayenne and salt in a large bowl until smooth. Soak the onion rings in the batter for 2 hours in the refrigerator. Using side burner. Heat oil in a large saucepan to 375 degrees F. In batches, remove onion rings from batter and dredge in the seasoned flour mixture. Fry for 3 to 4 minutes or until golden brown. Drain on paper towels and season immediately with salt.
  • For the aioli: place all ingredients in a blender and blend until smooth. Season with cayenne and salt.

Tips:

  • For crispy onion rings, use a coating of flour, eggs, and breadcrumbs. You can also add spices and herbs to the breadcrumb mixture for extra flavor.
  • To prevent the onion rings from sticking to the pan, make sure the oil is hot enough before adding them. You can also spray the pan with cooking spray.
  • Cook the onion rings until they are golden brown and crispy. This will take about 2-3 minutes per side.
  • Serve the onion rings with your favorite dipping sauce. Some popular options include ketchup, mayonnaise, and ranch dressing.
  • For the grilled tomato aioli dipping sauce, simply grill some tomatoes until they are slightly charred. Then, puree them in a blender or food processor with mayonnaise, garlic, and lemon juice.

Conclusion:

Buttermilk onion rings with grilled tomato aioli dipping sauce are a delicious and easy-to-make appetizer or snack. They are perfect for parties or get-togethers.
