- Turn dough onto a lightly floured surface; punch down. Shape into 24 balls and place in two greased 9-inch square baking pans. Cover and let rise in a warm place until doubled, about 30 minutes. Bake at 400° for 20 minutes or until golden brown. Remove to wire racks.

- In several large bowls, combine 15 cups flour, buttermilk powder, sugar, salt, yeast and baking soda. Add water and oil. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 10 minutes. Place in several large greased bowls, turning once to grease top. - 1. In a large mixing bowl,dissolve yeast in warm water. Add warm buttermilk,oil,and sugar. Combine flour, baking soda,salt. Add to yeast mixture and beat until smooth.(in mixer with dough hooks)DO NOT KNEAD! Let stand 10 min. Turn dough onto a slightly floured surface. Punch down. Shape into 24 balls and place in 2 greased 9" square baking pans. Cover and let rise in a warm place until doubled (about 30 min.)
- 2. Bake in a preheated 400 degree oven;20 min. or until golden brown. Remove to wire racks******At the point I like to brush butter OR garlic butter on top of rolls.
