The goopy mix:
3/4 cup boiling water
4 Tbps melted butter
1 cup wheat bran
1/4 cup honey
1/4 cup orange marmalade
1/8 cup molasses
1/2 cup raisins
The dry mix:
1 cup wheat flour
1 cup white flour
1/2 Tbsp baking soda
1/2 tsp salt
The wet mix:
2 eggs
1 cup buttermilk

Steps:

  • In a big bowl, mix together the goopy mix and set aside for 5 mins. In a small bowl, beat the eggs and buttermilk together. In a medium bowl, sift together the dry mix ingrediants. Stir the dry mix into the goopy mix. Stir breifly, then add the wet mix. Stir together lightly until just mixed. Fill muffin cups and bake at 350 for 25 mins or until muffins spring back lightly when pressed with fingertip. Let cool in pan for 10 mins. While the muffins are cooling in the pan, brush the tops with some more honey and/or orange marmalade.
