Tips:

  • Use fresh coffee for the best flavor. If you don't have fresh coffee, you can use instant coffee, but be sure to use good quality instant coffee.
  • Don't overmix the batter. Overmixing can make the muffins tough.
  • Fill the muffin cups only about 2/3 full. If you fill them too full, the muffins will overflow.
  • Bake the muffins until a toothpick inserted into the center comes out clean. If the toothpick comes out with batter on it, the muffins need to bake longer.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  • Serve the muffins warm with your favorite toppings, such as butter, cream cheese, or chocolate chips.

Conclusion:

These café mocha mini muffins are a delicious and easy-to-make treat that is perfect for breakfast, brunch, or a snack. They are also a great way to use up leftover coffee.
